Bacon-Cheddar Cauliflower Chowder Recipe
Bacon-Cheddar Cauliflower Chowder Recipe
Ingredients:
8 slices center-cut bacon, chopped (half used for garnish)
1/2 small onion, chopped OR 1 teaspoon onion powder
1 celery stalk, chopped
2 garlic cloves, minced
salt & pepper
4 cups shredded or grated cauliflower (1/2 large head)
2 Tablespoons water
2 Tablespoons flour
2 cups chicken broth, divided
2 cups 2% milk
3-4 dashes hot sauce (or more or less)
2-1/2 cups (12oz) shredded sharp cheddar cheese, divided (half used for garnish)
2 green onions, chopped (optional)

2 cups chicken broth, divided
2 cups 2% milk
3-4 dashes hot sauce (or more or less)
2-1/2 cups (12oz) shredded sharp cheddar cheese, divided (half used for garnish)
2 green onions, chopped (optional)
Directions:
- Whisk together flour and 1/4 cup chicken broth in a small bowl then set aside.
- Saute bacon in a large soup pot over medium heat until crisp. Using a slotted spoon, transfer bacon to a paper towel-lined plate then remove all but 1 Tablespoon drippings from the pot. Add chopped onion (if using,) celery, and garlic to the pot then season with salt and pepper and saute until vegetables are tender, about 4-5 minutes.
- Add cauliflower and onion powder (if using) to the pot then stir to combine. Add water then place a lid on top and steam cauliflower until tender, stirring a couple times, about 5-7 minutes. Add remaining chicken broth and milk then turn up heat and bring to a boil.
- Slowly whisk in flour/chicken broth mixture while stirring, then turn down heat and simmer for 3-4 minutes, or until chowder has thickened. Turn off heat then stir in 2 cups cheddar cheese until smooth, then stir in half the cooked bacon. Taste and adjust salt, pepper, and/or hot sauce if necessary. Serve topped with remaining shredded cheese, cooked bacon, and green onions, if desired.

Low Carb Pizza Recipe
4 oz cream cheese, softened
4 egg
1⁄3 cup heavy cream
1⁄4 cup parmesan cheese, grated
1 tsp chives, chopped
1⁄2 tsp Italian or pizza seasoning
1⁄2 tsp fresh garlic, minced, or 1/4 teaspoon garlic powder
2 cup mozzarella cheese, shredded
1⁄2 cup pizza or tomato sauce, the lowest carb you can find
1 cup mozzarella cheese, shredded
1 toppings for the pizza, your choice
Directions
- Preheat oven to 375 degrees F (190 degrees C).
- Beat together cream cheese and eggs until smooth.
- Add heavy cream, parmesan, chives, Italian seasoning and garlic.
- Spray a 9 x 13 inch pan with cooking spray or grease with oil.
- Place 2 cups mozzarella cheese in the bottom of the pan.
- Pour egg mixture over cheese.
- Bake for 30 minutes.
- Remove from the oven and spread sauce over baked mixture.
- Add toppings of your choice.
- Sprinkle with remaining mozzarella cheese.
- Bake until bubbly and brown.
- Let stand for 5 minutes.

Low Carb Mexican Lettuce Wraps Recipe
Ingredients:
1 lb ground beef (you could use turkey if you wanted)
1 tsp garlic powder
1 tsp onion powder
1/2 tsp ground cumin
1/2 tsp chili powder
salt and pepper to taste
2 green onions chopped
10 large iceberg lettuce leaves, whole, washed and dried (you could use romaine, or Bibb lettuce)
1/2 cup cheddar or monterey jack cheese, shredded (I used a mixture of both)
1/2 cup sour cream
1/2 large tomato, chopped
1/2 large avocado, diced
Directions:
1. In a large pan over medium heat add the ground beef. Cook until lightly browned. Drain if there's excess grease.
2. Add the white part of the green onions to the pan and cook for 2 minutes. Add onion powder, garlic powder, cumin, and chili powder, salt and pepper to taste. Cook for 5 minutes more.
3. To assemble the wraps, top a lettuce leaf with taco meat, shredded cheese, avocado, sour cream, and the green tops of the green onions.

Low Carb Lemon "Cheesecake" Bars Recipe
Ingredients
3 oz package sugar-free lemon gelatin mix
2 tbsp lemon juice
8 oz packages low-fat cream cheese
1 cup boiling water
Directions
Stir the boiling water into the box of jello, mixing for about 2 minute.
Add the cream cheese and lemon juice.Mix until all lumps have disappeared.
Pour into an 8" square pan and chill until set.
Cut into 8 squares.
