Taco Cupcakes Recipe




pound ground beef
(1.25 ounce) package of Old El Paso taco seasoning mix
36 
wonton wrappers
(16 ounce) can Old El Paso refried beans
36 
tortilla chips
cups shredded cheddar cheese
sour 
optional toppings: cream, diced tomatoes, cilantro, onion


  • Preheat the oven to 375 degrees. Spray 18 muffin cups with cooking spray.
  • Brown beef in a skillet and drain the fat. Add the taco seasoning mix and water called for on the package and simmer for 4-5 minutes. Set aside.
  • Place one wonton wrapper in the bottom of each muffin cup. Layer about 1 Tbsp of refried beans on top of each wonton. Crush one tortilla chip on top of the beans. Top with 1 Tbsp of taco meat and 1 Tbsp of shredded cheese. Repeat the layers again with a wonton wrapper, refried beans, tortilla chips, taco meat, and cheese.
  • Bake for 15-18 minutes or until golden brown.
  • Remove cupcakes from tin and top with your favorite taco toppings (i.e. sour cream, diced tomatoes, onion, or cilantro)

Place slices of onion in a shallow dish. Pour the buttermilk over the top and let themsoak for about 1 - 2 hours, refrigerated.

Preheat oven to 450 degrees. Line baking sheet with parchment paper or foil.

Combine panko, bread crumbs and corn flakes and place half of the crumbs in a large dish, season with salt. Reserve the rest for when the first batch is used up. This should help avoid clumping and they should stick better to the onions.

Dip each soaked onion ring into the crumb mixture; coat well. Place rings onto two cookie sheets. Lightly spray with oil. Bake about 12 minutes or until golden brown.Serve immediately.

Bacon-Wrapped Jalapeno Chicken Bites Recipe


Ingredients:

  • 8 chicken tenders, flattened and cut in two
  • 3-ounce package softened cream cheese
  • 1 jalapeno pepper, seeded and finely chopped
  • 8 slices bacon, cut in half

Instructions:

1. Dab 1/2 teaspoon (more or less) of cream cheese on top of each chicken tender. Sprinkle a scant 1/4 teaspoon of peppers over cream cheese. Fold or roll chicken to enclose cream cheese mixture. Wrap each roll with one piece of bacon and secure with a toothpick.
2. Grill until bacon is brown and crispy on both sides.


Notes :
Be sure to wear plastic gloves when handling fresh jalapenos. The oil will attach itself to your hands and is not easily washed away. An inadvertent swipe of the hand close to your eyes could be an unforgettable experience.

For reference, if you are substituting for the chicken tenders (i.e. dark meat, large pieces of chicken breast, game meat), the size of the tenders I used were 5-6 inches long and 2-3 inches wide before flattening and cutting in half.

Try flattening meat inside a zip-lock bag as pictured above. No flying pieces, no contamination on your cutting board from the chicken, and cleanup is super easy.

Jalapeño Popper Dip Recipe



Ingredients 

6-8 slices of bacon, diced and cooked crispy
2 8-oz packages of cream cheese, soft
1 cup of mayonnaise
4-6 jalapeno's, chopped and deseeded. The seeds will make it fiery hot.
1 cup of cheddar cheese, shredded
1/2 cup of mozzarella cheese, shredded
1/4 cup diced green onion

Topping:
1 cup of crushed crackers ( I used Ritz)
1/2 cup parmesan cheese
1/2 stick of butter, melted



Directions

Preheat oven to 350.

Combine all of the ingredients into a medium bowl. Stir well.
Transfer to an oven proof dish. The size of the dish depends on how thick the dip is. The thicker the dip the longer it may need to warm up. I used this stoneware dish that is round and measures 12 inches across. My dip is usually about an inch thick.

Combine the topping ingredients and sprinkle all over the top of the dip.

Bake the dip for 20-30 minutes or until bubbly.

Jalapeno Corn Fritters Recipe



  • 3 cups fresh corn (from 3 to 4 ears)
  • 2 jalapeno peppers, seeds removed and chopped
  • 1 teaspoon baking powder
  • 2 teaspoons sugar
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon fresh ground pepper
  • 1/2 cup all purpose flour
  • 1/2 cup cornmeal
  • 1/2 teaspoon chili powder
  • 1/3 cup loosely packed chopped fresh cilantro
  • 1 large egg
  • 1/3 cup milk
  • 3 tablespoons olive oil
Instructions
  1. Mix all ingredients (except olive oil) in a large bowl with a large spoon.
  2. Heat oil in a skillet over medium heat.
  3. Form mixture into patties, about 1/3 cup each. Add additional flour, if needed to hold patties together.
  4. Fry until golden brown on each side for 3-4 minutes. Drain on paper towels to absorb excess oil.

INGREDIENTS:


12 ounces cream cheese, softened
1 (7 ounce) jar marshmallow crème
1/3 cup confectioners’ sugar
1 tablespoon orange zest
2 tablespoons, fresh orange juice



DIRECTIONS:

In a large bowl, use an electric mixer to blend all ingredients until well combined. Refrigerate Dreamsicle Fruit Dip for at least 3 hours before serving. Serve with a variety of fresh fruit.

8 oz. sour cream
8 oz. cream cheese
16 oz. cheddar cheese, grated (sharp or mild)
4 oz. chopped green chiliesGreen onion (suit your own taste)
1 c. chopped ham
1/2 pound chopped bacon
1 round bread loaf, hollowed out



Mix first seven ingredients together and put into the hollowed out bread loaf. Bake at 350 degrees uncovered for one hour. Serve with leftover bread or chips.

Layered Greek Dip Recipe


Ingredients
  • 1 8-ounce package cream cheese, softened
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried Italian seasoning
  • 2 cloves garlic, minced
  • 1½ cups prepared hummus
  • 1 cup chopped cucumber
  • 1 cup chopped tomato
  • ½ cup chopped pitted Kalamata olives
  • ½ cup crumbled feta cheese
  • ⅓ cup sliced green onions
  • Pita chips



Instructions
  1. Add cream cheese, lemon juice, Italian seasoning and garlic in a medium mixing bowl. Beat with an electric mixer until combined.
  2. Spread cream cheese mixture into a serving dish. Spread the hummus on top of the cream cheese mixture then top with the remaining ingredients.
  3. Cover and refrigerate for at least 2 hours and up to 12 hours. Serve with pita chips.

Ultimate Spinach Artichoke Dip Recipe

1 tbsp. butter
3-4 cups baby spinach
2 green onions, thinly sliced
1/2 cup chopped tomatoes
1/3 cup chopped marinated artichoke hearts
1/8 tsp. garlic powder
5 oz. cream cheese
4 oz. monterey jack cheese, grated
kosher salt and black pepper to taste

Preheat oven to 350. Spray a small (2-3 cup) baking dish with nonstick spray.
In a skillet, melt butter over medium heat. Add in baby spinach and green onions, cook until spinach has wilted down. Season with salt and pepper. Add in tomatoes, artichokes, garlic powder and cream cheese. Cook and stir frequently until the cream cheese has melted down. Remove pan from heat. Stir in monterey jack cheese.
Pour the dip into your prepared dish and pop it in the oven for 15 minutes. Serve piping hot with pita or tortilla chips.
