Grilled Peach & Mozzarella Salad Recipe



Ingredients

    Salad:
  • 2 firm, yet ripe peaches
  • 2 teaspoons olive oil
  • 1 teaspoon balsamic vinegar
  • 2 cups baby arugula
  • fresh mozzarella, sliced
  • a few dollops of pesto
  • sprinkle of toasted pine nuts
  • salt & pepper
  • mint & basil pesto:
  • 1 packed cup of a mix of mint & basil
  • 1/4 cup pine nuts, toasted (you could also use walnuts instead)
  • 1/2 garlic clove, roughly chopped
  • juice and zest from 1/2 a lemon
  • 1/4 cup olive oil (or more)
  • a few pinches of red pepper flakes
  • salt & pepper
Instructions
  1. Slice the peaches into 6 segments per peach. In a small bowl, toss peaches with olive oil, balsamic, and just a small pinch of salt.
  2. Heat your grill (or grill pan) to medium high heat and brush it with some oil. Place the peach slices on the hot grill and cook each side for 2-3 minutes without moving them (near the end you can gently peek to see how your grill marks are coming along). When your peaches are grilled, set aside and allow them to cool to room temperature.
  3. Meanwhile make the pesto. Combine all ingredients in a small food processor and pulse to combine. Add more oil for a smoother pesto, or leave it chunky - whichever consistency you prefer.
  4. Toss the arugula with just a little bit of olive oil and a few pinches of salt. Assemble on a platter and top with mozzarella slices, peaches, dollops of pesto, and a few pinches of red pepper flakes. Squeeze just a bit of lemon on top and serve.

Honey Mustard Mozzarella Chicken Recipe


Ingredients:
  • 4 skinless, boneless chicken breast halves
  • 3/4 cup honey
  • 1/2 cup prepared mustard
  • lemon pepper to taste
  • 4 slices bacon, cut in half
  • 1 cup shredded mozzarella cheese


Instructions:
  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Place the chicken breast halves in a baking dish, and drizzle evenly with honey and mustard. Sprinkle with lemon pepper.
  3. Bake chicken 25 minutes in the preheated oven. Top each breast half with 2 bacon slice halves, and sprinkle evenly with cheese. Continue baking 10 minutes, or until chicken juices run clear, bacon is crisp, and cheese is bubbly.

Chicken Parm Meatballs Recipe





Ingredients:

  • 1 1/4 pounds minced chicken
  • 2 tablespoons onion, chopped
  • 1/2 cup Parmesan
  • 1/2 cup breadcrumbs
  • zest of 1/2 lemon
  • 1 tablespoon parsley, chopped
  • 1 minced  clove garlic
  • 1 tsp fennel seeds
  • 1 egg, whisked
  • salt & pepper to taste
  • 1 14-oz  canned pizza sauce
  • 3 tablespoons olive oil
  • 4 oz fresh mozzarella

Directions:

  1. Preheat oven to 400 degrees with the wrack near the top.
  2. Throw in all the ingredients – except for the last 3 – into a bowl, and mix well.
  3. Make large balls with your hands, and arrange them on a foil sheet
  4. Open the canned pizza sauce, and in bowl, mix 1 spoon of the sauce and 3 tsps olive oil.
  5. Use a brush to rub the mixture on the meatballs.
  6. Put in the oven and bake for 15 mins.
  7. When ready, take out from the oven and add some pizza sauce to the meatballs.
  8. Slice the cheese and place a slice on each meatball.
  9. Turn heat on to highest, and insert the meatballs again for 3 to 5 mins for the cheese to toast.
  10. Empty out can of sauce into a pot/pan and heat up.
  11. Remove meatballs from oven and drop the heated sauce as the final touch before serving.
  12. Throw into a bowl the following for a recommended, accompanying salad.
Chopped up shallots and Tuscan kale
Parmesan, olive oil, salt & pepper.

Baked Zucchini with Mozzarella


Baked Zucchini with Mozzarella

  • 2 medium sized (or about 5 small) zucchini
  • Johnny’s Garlic Spread & Seasoning (I found it at Costco or Sam’s)
  • salt
  • 2 C shredded mozzarella cheese (thought I had mozzarella but I didn’t so I used a bled of Monterrey and cheddar and I didn’t measure the cheese, just put on what looked good)
1. Slice your zucchini up into 1/2 inch rings.
2. Lay them out flat on a large cookie sheet. Sprinkle with Johnny’s Garlic Seasoning and a bit of salt.
3. Bake in the oven at 350 for about 10-15 minutes or until crisp tender.
4. Take the hot pan out of the oven and sprinkle the zucchini with cheese. Turn the oven to broil, throw that cookie sheet back into the oven and let the cheese get all bubbly and a bit browned. This should only take about 3-5 minutes. Be careful here. Broiling things in the oven can get out of control in a fast hurry. (my trick for broiling is to not move the rack up, I just keep it in the middle of the oven and things are less likely to burn.  It may take a minute longer, but no burnt food)

Mozzarella, Tomato and Avocado Salad





Mozzarella, Tomato and Avocado Salad

       1 container cherry tomatoes, cut in half
       1 carton fresh mozzarella cheese pearls, drained
       1 avocado, peeled and diced
       1/3 cup basil, julienned
       2 tablespoons fresh parsley
       1/4 cup lemon juice
       1/4 cup olive oil
       salt and pepper
       baguette-optional

        1) In a large bowl, combine the tomatoes, mozzarella, basil and parsley, Set aside.
        2) In a small bowl, whisk the lemon juice, oil, salt and pepper. Pour over tomato
        mixture. Toss to coat. Cover and refrigerate for 1 hour before serving.
        3) Just before serving the salad, stir in the chopped avocados. Serve salad with
        slotted spoon and toasty bread.

Balsamic Grilled Bruschetta Chicken

Balsamic Grilled Bruschetta Chicken

4 boneless skinless chicken breasts, thawed (I use the big Costco bag)
Pinch of salt
¼ Cup balsamic vinegar
¼ Cup extra virgin olive oil
8 slices fresh mozzarella cheese
4 Roma Tomatoes, seeded and diced
8 fresh basil leaves, stacked, rolled and thinly sliced into chiffonade
3 cloves fresh garlic, minced
Pinch of salt
1 Tablespoon balsamic vinegar
1. Preheat a grill pan over medium heat on the stovetop. Spray with cooking spray. Combine balsamic and olive oil in a bowl. Season both sides of chicken with pinches of salt and place on grill. Brush top sides of chicken with balsamic mixture.Cook for 4-5 minutes and flip chicken. Brush with additional balsamic and cook for an additional 4-5 minutes or until cooked through. During the last 2 minutes of grilling place 2 slices of cheese over top each chicken to melt.
2. In a large bowl combine the tomatoes, basil garlic, salt and balsamic. Toss gently to combine. Place chicken breasts on a serving plate and top with tomato mixture. Serve warm.

Antipasto Kababs

Antipasto Kababs
Makes 60

1  9 oz package of Three Cheese Tortellini ,(I used Buitoni )cooked to package directions
1 can Medium or Large pitted Black Olives
1 5.75 oz jar Green Olives
2 12 oz containers of marinated mozzarella balls(usually found near the speciality cheeses)
30 slices of Salami, cut in half
60 pieces of pepperoni
1 cup Balsamic Vinaigrette Salad Dressing (store bought or homemade), I used Paul Newmans( he and   my Dad used to race cars together)
60 Skewers   How ever many you want to make. I had to cut mine in half

Place the cooked tortellini in a bowl or large gallon freeze bag. Pour the salad dressing over the top and marinade in the fridge for a few hours.
Drain the pasta.
Place each item onto the skewer using the pointy side.
Can be made a few hours ahead and placed in the refrigerator covered

Chicken Rollatini Stuffed with Zucchini and Mozzarella


Ingredients: 

  • 1 tsp olive oil
  • 4 cloves garlic, chopped
  • 1 1/2 cups (1 medium) zucchini, shredded
  • 1/4 cup + 2 tbsp Romano cheese (or parmesan)
  • 3 oz part skim shredded mozzarella
  • salt and pepper to taste
  • 8 thin chicken cutlets, 3 oz each
  • 1/2 cup Italian seasoned breadcrumbs
  • 1 lemon, juice of
  • 1 tbsp olive oil
  • salt and fresh pepper
  • olive oil non-stick spray 

Directions:

Wash and dry cutlets, season with salt and pepper.  Preheat oven to 450°. Lightlyspray a baking dish with non-stick spray.

In a large skillet, heat oil on medium-high heat. Add oil when hot then saute garlic a minute, or until golden. Add zucchini, 1/4 cup Romano cheese, salt and pepper and saute about 3-4 minutes, stirring occasionally. Set aside to cool. When cool, addmozzarella cheese and mix to combine.

Lay chicken cutlets down on a working surface and spread 3 tbsp of zucchini-cheese mixture on each cutlet. Loosely roll each one and keep seam side down.

Combine breadcrumbs and grated cheese in one bowl; in a second bowl combine olive oil, lemon juice, and pepper in another bowl.

Dip chicken in lemon-oil mixture, then in breadcrumbs and place seam side down in a baking dish (no toothpicks needed). Repeat with the remaining chicken. When finished, lightly spraywith oil spray. 

Bake 25 - 30 minutes. Serve immediately. Serving size is listed as one, but if you are having this as a low carb meal with a salad, I suggest you have two.

Caprese Salad with Grape Tomatoes, Mozzarella and Basil Recipe



Caprese Salad with Grape Tomatoes, Mozzarella and Basil
.

4 - 5 cups grape or cherry tomatoes, sliced in halves
1 lb fresh imported Italian mozzarella, cut into 1/4 - 1/2" cubes
1/4 cup extra virgin, first preseed Italian olive oil
1 Tbsp. balsamic vinegar (or red wine vinegar for a more mild flavor)
10 - 15 large fresh basil leaves (to taste)
Italian sea salt to taste
Freshly ground black pepper to taste
Fresh Italian bread
.

Toss together the tomatoes, mozzarella, olive oil, and balsamic vinegar.
Tear the basil into large pieces and toss into the salad.
Season to taste with sea salt and freshly ground black pepper.
Serve immediately (can be refrigerated to serve a little bit later too).
Serve with fresh, crusty Italian bread.
