Pepperoni & Cheese Bread Recipe

Ingredients:
Pizza dough (I have used Pillsbury and Publix bakery dough – I think we prefer Publix, but it’s difficult to roll out)
Mozzarella cheese, sometimes I add in Cheddar for some variety.
Fresh Spinach leaves
Pepperoni
Egg White
Parmesan cheese


Roll out the dough on a cookie sheet and start to layer your spinach, cheese & pepperoni.  There really is no limit to what kind of ingredients you use.  Just depends on what your family likes.  The good news is my kids don’t really notice the spinach!
Once all of your ingredients are layered on, you can begin to roll the dough up.  When you are done rolling, pinch the seam and both ends together so the cheese doesn’t ooze out.  Make sure the seam is on the bottom, touching the cookie sheet.
I usually cook at 350 for 20+ minutes.  You’ll just want to keep an eye on it in case it needs more or less time in your oven.   Once it starts to brown you can brush it with a little egg white and sprinkle with parmesan cheese to make it pretty.
Let it cool for 5-10 minutes and slice with a serrated bread knife.

Gluten Free Waffle Pizza Recipe

1 frozen gluten-free waffle
2 -3 tablespoons pizza sauce 
6 pepperoni slices
2 tablespoons mozzarella cheese



1. Toast waffles until browned and crisp.
2. Heat broiler.
3. Spread a large spoonful of pizza sauce on tops of waffles.
4. Top with pepperoni or other toppings of your choice.
5. Cover with mozzarella cheese.
6. Broil until cheese melts and brown slightly on top.

Deep Dish Pizza Cupcakes Recipe

1 can refrigerated crescent rolls (I used the seamless sheet)
1/2 cup pizza sauce
1 cup shredded mozzarella cheese
1/2 tsp garlic powder
pizza toppings - pepperoni, ham, sausage, peppers, onions, mushrooms



Preheat oven to 375.

Spray 8 regular muffin cups with cooking spray.  Cut crescent roll dough into 8 squares.  Press into muffin cups.

Sprinkle some of cheese (about 1 Tbsp) in the bottom of each muffin cup.  Top with 1 Tbsp of pizza sauce.  Add remaining cheese and top with pizza toppings.  Sprinkle garlic powder over toppings.

Bake 15-18 minutes. Remove from pan and serve immediately.

Pepperoni Pizza Puffs

Pepperoni Pizza Puffs 


  • 3/4 cup flour
  • 3/4 teaspoon baking powder
  • 1 tablespoon Italian seasoning
  • pinch of salt
  • pinch of red pepper flakes
  • 3/4 cup whole milk
  • 1 egg, lightly beaten
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 cup cubed pepperoni
  • 1/2 cup store-bought pizza sauce

1. Preheat the oven to 375 degrees. Grease a 24-cup mini-muffin pan. In a large bowl, whisk together the flour, baking powder, Italian seasoning, salt and red pepper flakes (if using) ; whisk in the milk and egg. Stir in the mozzarella, Parmesan and pepperoni; let stand for 10 minutes.

2. Stir the batter and divide among the mini-muffin cups. Bake until puffed and golden, 20 to 25 minutes.

3. Meanwhile, microwave the pizza sauce until warmed through. Serve the puffs with the pizza sauce for dipping.

NOTE: All my batter did not fit into the 24-mini muffin pan. So I made a full size muffin with the leftover batter. Some pans are larger than others so you may not have have an issue.

Antipasto Kababs

Antipasto Kababs
Makes 60

1  9 oz package of Three Cheese Tortellini ,(I used Buitoni )cooked to package directions
1 can Medium or Large pitted Black Olives
1 5.75 oz jar Green Olives
2 12 oz containers of marinated mozzarella balls(usually found near the speciality cheeses)
30 slices of Salami, cut in half
60 pieces of pepperoni
1 cup Balsamic Vinaigrette Salad Dressing (store bought or homemade), I used Paul Newmans( he and   my Dad used to race cars together)
60 Skewers   How ever many you want to make. I had to cut mine in half

Place the cooked tortellini in a bowl or large gallon freeze bag. Pour the salad dressing over the top and marinade in the fridge for a few hours.
Drain the pasta.
Place each item onto the skewer using the pointy side.
Can be made a few hours ahead and placed in the refrigerator covered

Pepperoni Rolls

Ingredients:
3 cans Pillsbury Buttermilk Biscuits (10 biscuits per can)
56 pepperoni slices
Block of cheese (I use Colby & Monterey Jack)
1 beaten egg
Parmesan
Italian seasoning
Garlic powder
1 jar pizza sauce
