Baked Chicken Parmesan Recipe


Ingredients:  


  • 4 (about 8 oz each) chicken breast, fat trimmed, sliced in half to make 8
  • 3/4 cup seasoned breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp butter, melted (or olive oil)
  • 3/4 cup reduced fat mozzarella cheese 
  • 1 cup marinara or Filetto di Pomodoro
  • cooking spray


Directions: 


    Preheat oven to 450°. Spray a large baking sheet lightly with spray.

    Combine breadcrumbs and parmesan cheese in a bowl. Melt the butter in another bowl. Lightly brush the butter onto the chicken, then dip into breadcrumb mixture. Place on baking sheet and repeat with the remaining chicken. 

    Lightly spray a little more oil on top and bake in the oven for 20 minutes. Turn chicken over, bake another 5 minutes.  

    Remove from oven, spoon 1 tbsp sauce over each piece of chicken and top each with 1 1/2 tbsp of shredded mozzarella cheese. 

    Bake 5 more minutes or until cheese is melted.

    Baked Chicken And Sweet Potatoes Recipe

    Ingredients

    • 1 chicken cut into pieces (~4 lb)
    • 1 yellow onion, cut into wedges
    • 2 sweet potatoes peeled and cut into 1 inch chunks
    • 2 yukon gold potatoes peeled and cut into chunks
    • 2 tbls olive oil
    • 1 tsp kosher salt
    • 1/2 tsp black pepper
    • 3 tbls maple syrup
    • 6 sprigs of fresh thyme.
    • I definitely used more chicken & sweet potatoes and more olive oil and maple syrup because it will give you extra sauce.

    Preparation

    1. Heat oven to 400 *F
    2. Rinse chicken and pat dry.
    3. Arrange chicken, onion and potatoes in baking dish.
    4. Drizzle oil over and season with salt and pepper. Toss to coat.
    5. Drizzle with maple syrup and top with sprigs of thyme. Roast, stirring the vegatable once unti lchicken is cooked through, about 1 hour and 15 min.
    6. Let rest for 10 min before serving.
    7. I definitely used more chicken & sweet potatoes and more olive oil and maple syrup because it will give you extra sauce. FYI--I also think the kosher salt is very important.

    Ingredients
    • 3-4 frozen chicken breasts
    • 1 cup plain greek yogurt
    • 1/2 cup freshly grated parmesan cheese
    • 1 tsp garlic salt
    • 1/2 tsp Mrs. Dash, any flavor
    • 1/2 tsp ground black pepper
    • 1 tsp garlic powder
    • 2 tsp red chili flakes
    • pinch of cayenne pepper
    Directions
    1. Mix all of the ingredients (except the chicken) together in a small mixing bowl.
    2. Evenly coat the chicken with the mixture on both sides.
    3. Wrap each breast in foil and bake at 400 degrees for 45 minutes.

    Cheesy Garlic Baked Chicken Recipe



    Ingredients

    4boneless skinless chicken breasts -thin
    4garlic cloves, minced
    4tablespoons brown sugar
    3teaspoons olive oil
    1teaspoon salt
    1cup of cheese




    Directions

    1 Preheat oven to 375°F and line a casserole dish (I used this one) with tin foil this will help with the clean up afterwards lightly grease it.
    2 In small sauté pan, sauté garlic with the oil until tender.
    3 Remove from heat and stir in brown sugar & a teaspoon of salt
    4 Place chicken breasts in a prepared baking dish and cover with ¾ of the garlic and brown sugar mixture.
    5 Add salt and pepper to taste.
    6 Bake uncovered for 30 minutes.
    Within the last 10 minutes before removing it out of the oven put your cheese on top then put the remaining brown sugar and garlic mixture on top of the cheese and let bake 10 minutes or until cheese is fully melted.

    Cheddar & Bacon Loaf Recipe

    ingredients
    • 116  ounce loaf  baguette-style French bread
    • 1/28  ounce package  shredded sharp cheddar cheese (1 cup)
    • 1/2 cup  butter, softened
    • 1/3 cup  cooked bacon pieces
    • 2 medium  green onions, sliced (1/4 cup)
    • 2 teaspoons  yellow mustard
    • 1 teaspoon  lemon juice


    directions

    1.Preheat oven to 350 degrees F. Use a serrated knife to cut bread crosswise into 1-inch slices, cutting to but not through the bottom crust.
    2.In a small bowl, stir together cheese, butter, bacon, green onions, mustard, and lemon juice. Spread mixture between slices of bread. Wrap loaf in foil.
    3.Bake for 10 to 15 minutes or until bread is heated through and cheese is melted.

    Baked Zucchini Chips Recipe

    • 1/4 cup dry breadcrumbs
    • 1/4 cup (1 ounce) grated fresh Parmesan cheese
    • 1/4 teaspoon seasoned salt
    • 1/4 teaspoon garlic powder
    • 1/8 teaspoon freshly ground black pepper
    • 2 tablespoons fat-free milk
    • 2 1/2 cups (1/4-inch-thick) slices zucchini (about 2 small)
    • Cooking spray

    Preheat oven to 425°.
    Combine first 5 ingredients in a medium bowl, stirring with a whisk.
    Place milk in a shallow bowl.
    Dip zucchini slices in milk, and dredge in breadcrumb mixture.
    Place coated slices on an ovenproof wire rack coated with cooking spray; place rack on a baking sheet.
    Bake at 425° for 30 minutes or until browned and crisp.
    Serve immediately.

    Baked Ziti Recipe


    Ingredients:
    12 ounces rigatoni pasta
    3 tablespoons extra virgin olive oil
    3 spicy Italian sausages, casings removed
    1/2 yellow onion, diced
    1 green bell pepper, seeded and diced
    2 garlic cloves, minced
    2 1/2 cups homemade or store bought marinara
    1 cup part-skim mozzarella cheese
    1/2 parmesan, grated
    salt and pepper to taste

    Directions:
    1. Preheat oven to 350°F.
    2. Fill a large pot with water and bring to a boil. Add a small handful of salt and pasta to water and stir. Boil pasta for 7 to 10 minutes, stirring occasionally, or until pasta is al dente. Drain, toss with a teaspoon of oil, pour into a large mixing bowl and
    3. Pour 1 tablespoon of olive oil into a large sauté pan and place over medium- high heat. Add sausage and break apart with a wooden spoon. Cook sausage for about 5 minutes or until evenly browned. Drain and add to pasta.
    4. Discard grease and add remaining oil to pan. Add onion, bell peppers and garlic to pan and sauté for 3 to 4 minutes. Season with salt and pepper. Pour onion mixture over sausage and pasta mixture and toss together.
    5. Add marinara, 1/2 cup mozzarella and 1/4 cup parmesan and gently fold together until fully incorporated. Adjust seasonings.
    6. Pour mixture into a lightly greased 8”x 8” baking dish and top with remaining mozzarella and parmesan.
    7. Bake for 20 to 25 minutes or until the cheese bubbles and browns.
    8. Allow ziti to cool for 5 to 7 minutes before serving.

    Oven Baked Meatball Sandwiches Recipe

    Ingredients
    • Sandwich rolls (cut with one side intact)
    • Cooked Meatballs (your favorite recipe or frozen, pre-made meatballs)
    • Pasta Sauce (homemade or jarred)
    • Shredded Mozzarella Cheese
    Instructions
    1. Spray a baking sheet with cooking spray. Preheat oven to 400 degrees F.
    2. Place your frozen cooked meatballs or homemade cooked meatballs in a large pot. Cover with your pasta sauce. Gently fold the meatballs with the sauce, Heat the meatballs and sauce on low-medium, stirring occasionally, until the meatballs are heated thoroughly.
    3. Fill a roll with as many meatballs as you can fit (usually 4-5 meatballs, depends on size of meatballs and the size of the roll). Top with more pasta sauce from your pot. Place filled sandwich rolls closely on baking sheet. Top each sandwich with shredded mozzarella cheese.
    4. Bake until cheese is melted, hot, and bubbly.

    The Best Baked Salmon Recipe

    1.5 lbs salmon (this was wild sockeye salmon)
    2 Tbsp fresh parsley, finely chopped
    2 large OR 3 small cloves of garlic, pressed
    1.5 tsp Dijon mustard (grey poupon)
    1/2 tsp salt
    1/8 tsp freshly ground black pepper
    1/8 cup mild olive oil
    2 Tbsp fresh lemon juice
    Lemon slices 
    Preheat the oven to 450 degrees F.
    1. Line a rimmed baking dish with foil. I  didn’t line the dish and I regretted it; I scrubbed fiercely for a day and a half.
    2. In a small bowl, combine 2 Tbsp freshly chopped parsley, 2-3 cloves pressed garlic, 1.5 tsp dijon, 1/2 tsp salt, 1/8 tsp pepper, 1/8 cup olive oil and 2 tbsp fresh lemon juice. Mix well. Smell it; it’s amazing!
    3. Cut salmon into even portions: I made 4 generous cuts of salmon. Lay them onto your lined baking dish skin side down.
    4. Generously brush all sides of your salmon with the sauce and top with fresh lemon slices.
    5. Bake at 450 °F for 12-15 minutes or until just cooked through. Don’t over-cook or your fish will be dry. Voila! Easy, excellent dish.

    2 cans (12oz) golden layer buttermilk biscuits (Pillsbury Grands! Jr)
    1 jar (15oz) pizza sauce
    2 cups mozzarella cheese
    your favorite pizza toppings - cooked sausage, turkey pepperoni, peppers, mushrooms
    cooking spray
    Preheat oven to 375 degrees.  Cut biscuits into quarters and place in medium bowl.  Toss biscuits with pizza sauce.  Add pizza topping and half of the cheese.  Toss until well blended.  Spray a 9x13 pan with cooking spray.  Pour biscuit mixture into pan and top with remaining cheese.  Bake at 375 for 25-30 minutes, or until biscuits are done.

    Baked Crunchy Taco Casserole Recipe

    Ingredients:
    1 pound ground beef or turkey
    1 (14.5 oz) can petite diced tomatoes, drained
    1 packet taco seasoning
    1 C cheese, divided
    1/4 C salsa verde
    15 crunchy taco shells
    Shredded lettuce, tomatoes, cilantro, sour cream, guacamole, lime juice to top
    Instructions:
    Preheat oven to 400 degrees.
    Brown and drain meat.
    Stir tomatoes, seasoning, 1/2 C cheese, and salsa into meat.
    Arrange taco shells standing up in a 9×13″ pan. Fill each shell with the meat mixture, dividing equally until all the meat is used.
    Sprinkle remaining 1/2 C of cheese over the tops of the filled tacos and bake for 15-20 minutes. Cheese will be melted and the meat hot.
    Top with shredded lettuce, tomatoes, cilantro, sour cream, guacamole and lime juice.

    Shrimp Lemon Garlic Shrimp and Grits Recipe


    Ingredients

    ¾cup instant grits
    Kosher salt and freshly ground black pepper
    ¼cup grated parmesan cheese
    3tablespoons unsalted butter
    pounds medium shrimp, peeled and deveined, tails intact
    2large cloves garlic, minced
    Pinch of cayenne pepper (optional)
    Juice of ½ lemon, plus wedges for serving
    2tablespoons roughly chopped fresh parsley

    Directions

    Bring 3 cups of water to a boil in a medium saucepan over high heat, covered. Uncover and slowly whisk in the grits, 1 teaspoon salt and 1/2 teaspoon pepper. Reduce the heat to medium low and cook, stirring occasionally, until thickened, about 5 minutes. Stir in the parmesan and 1 tablespoon butter. Remove from the heat and season with salt and pepper. Cover to keep warm. Meanwhile, season the shrimp with salt and pepper. Melt the remaining 2 tablespoons butter in a large skillet over medium-high heat. Add the shrimp, garlic and cayenne, if using, and cook, tossing, until the shrimp are pink, 3 to 4 minutes. Remove from the heat and add 2 tablespoons water, the lemon juice and parsley; stir to coat the shrimp with the sauce and season with salt and pepper. Divide the grits among shallow bowls and top with the shrimp and sauce. Serve with lemon wedges.
