WEIGHT WATCHERS CHEESEBURGER NOODLE CASSEROLE RECIPE

Ingredients:
1 lb. ground beef
8 oz. spaghetti or pasta noodles
one 14.5 oz. can peeled, diced tomatoes
1 packet dry onion soup mix
1 cup sour cream (low fat)
1/2 tsp. dried basil
1/4 tsp. garlic powder
salt, pepper to taste
1 cup shredded cheddar cheese

Preheat oven to 350.

In a large skillet over medium high heat, saute ground beef 5 minutes or until browned; drain excess fat. Prepare spaghetti according to pkg. directions; drain water.

In a 2 qt. casserole, combine ground beef cooked spaghetti, tomatoes, onion soup mix, sour cream, basil, garlic powder, salt, pepper to taste. Mix together well.

Cover dish, bake in preheated oven 15 minutes. Top with cheese, bake, uncovered, 15 more minutes.

Weight Watchers Cheddar Ranch Chicken Pasta Recipe


INGREDIENTS

  • 1/2 pound whole wheat penne pasta
  • 4 slices bacon (cooked until crispy)
  • 1/2 tablespoon light butter
  • 1 cup 1% (milk)
  • 1 whole chicken breast (cooked )
  • 1 tablespoon all purpose flour
  • 1/2 cup shredded cheddar cheese (reduced fat)
  • 1/2 packet ranch seasoning mix

DIRECTIONS

Step 1
Cook pasta according to package directions in boiling salted water; drain, return to pot, and keep warm.
Step 2
Meanwhile, cook bacon in a large skillet over medium heat until crisp. Drain on paper towels. Drain all but 1/2 tablespoon of bacon drippings from the pan.
Step 3
Season the chicken with salt and pepper. Add the butter to the reserved bacon drippings, then add the chicken to the same skillet. Cook until tender, no longer pink, and slightly browned.
Step 4
Sprinkle the flour and ranch dressing mix over the chicken, stirring to coat evenly. Stir in the milk, and cook, stirring occasionally, until thickened and bubbly. Stir in the cheddar cheese and half of the reserved bacon; cook and stir until the cheese is melted. Taste for seasoning and adjust as needed.
Step 5
Serve each plate of pasta with more bacon sprinkled over the top.

Ingredients:
2 garlic cloves, minced
1 tablespoon tomato paste
2 cups chopped cabbage
1/2 yellow onion
1/2 cup chopped carrot
1/2 cup green beans
1/2 cup chopped zucchini
1/2 teaspoon basil
1/2 teaspoon oregano
salt & pepper



3 cups nonfat beef broth (beef is the best) or 3 cups nonfat vegetable broth (beef is the best) or 3 cups nonfat chicken broth (beef is the best)

Directions:
1. Spray pot with non stick cooking spray saute onions carrots and garlic for 5 minutes.
2. Add broth, Tomato paste, cabbage, green beans, basil, oregano and Salt & Pepper to taste.
3. Simmer for a about 5-10 minutes until all vegetables are tender then add the zuccini and simmer for another 5 or so minutes.

Weight Watcher's Deep-Dish Pizza Casserole Recipe

Ingredients
  • 1 lb ground round
  • cooking spray ( Pam)
  • 1 (10 ounce) cans refrigerated pizza dough
  • 6 ounces shredded part-skim mozzarella cheese

Directions
  1. Preheat oven to 425°.
  1. Cook meat in a nonstick skillet over medium-high heat until browned, stirring until it crumbles. Drain, if necessary, and return to skillet. Add tomatoes, and cook until heated through.
  1. While meat cooks, coat a 13 x 9 inch baking dish with cooking spray. Unroll pizza crust dough, and press into bottom and halfway up sides of the baking dish. Top the pizza crust with meat mixture.
  1. Bake, uncovered, at 425° for 12 minutes. Top with cheese, and bake 5 minutes or until crust is browned and cheese melts. Cool 5 minutes before serving. 
    Yield: 6 servings. Each serving is 6 Weight Watcher's points.

Weight Watcher's Chicken Pot Pie Recipe



Ingredients

    • 1 cup Bisquick reduced-fat baking mix
    • 1/2 cup skim milk
    • 1/4 cup egg substitute
    • 2 cups frozen mixed vegetables
    • 2 cups cooked chicken breasts, chopped
    • 2 (10 3/4 ounce) cans reduced-fat reduced-sodium condensed cream of mushroom soup

Directions

  1. Preheat oven to 400.
  2. Spray 8x8 casserole dish with cooking spray.
  3. Mix together veggies, chicken and soup. Pour into casserole dish.
  4. In another bowl, mix bisquick, milk, and egg. Pour over top of chicken mixture.
  5. Bake for 30 minutes, or until crust is golden.
  6. 6 servings=4.5 points.
  7. 4 servings=6.5 points.

Weight Watcher Oven Fried Fish Recipe

Ingredients

    • 1 1/2 lbs fresh haddock or 1 1/2 lbs tilapia fillets or 1 1/2 lbs other white fish
    • 1/4 cup white cornmeal ( or yellow)
    • 1/4 cup dry breadcrumbs ( I use seasoned)
    • 1/2 teaspoon dried dill
    • 1/2 teaspoon salt
    • 1/8 teaspoon pepper
    • 1/2 teaspoon paprika
    • 1/3 cup skim milk
    • 3 tablespoons butter, melted

Directions

  1. Preheat oven to 450 degrees.
  2. In a shallow dish, like a pie plate, combine all dry ingredients.
  3. Place milk in another shallow dish.
  4. Dip fish in milk, then in crumb mixture.
  5. Place in pan coated with cooking spray.
  6. Drizzle with melted butter.
  7. Bake for 10 minute or until fish flakes apart with fork.
