Bacon Wrapped Muffin Recipe

Bacon Wrapped Muffin Recipe


Makes 12 cups
12 slices bacon
8 eggs
1/2 cup shredded cheddar cheese
pinch of salt
1/4 tsp black pepper

Preheat oven to 350 degrees.
Whip the eggs, salt, pepper and cheese with a fork. Spray non stick spray in 12 muffin tins. Wrap each piece of bacon inside the sides of each muffin cup.

Easy Egg Muffins Recipe



Homemade Egg Muffins Recipe 

Ingredients:
15 eggs (for silicone muffin pans, use 12 eggs for metal muffin tins or individual silicone cups. You can use less egg yolks and more egg white if you prefer.)
1-2 tsp. Spike Seasoning 
1-2 cups grated low fat cheese
3 green onions diced small.
Optional: chopped veggies such as blanched broccoli, red pepper, zucchini, mushrooms, etc. (Using veggies will reduce the fat content)
Optional: diced Canadian bacon, lean ham, or crumbled cooked turkey sausage

Instructions:

Preheat oven to 375 F. Use regular or silicone muffin pan, 12 muffin size. If using silicone pan, spray with nonstick spray. If using regular muffin pan, put two paper liners into each slot, then spray liner with nonstick spray.

In the bottom of the muffin cups layer diced meat, if using, vegetables, if using, cheese and green onions. You want the muffin cups to be about 2/3 full, with just enough room to pour a little egg around the other ingredients. Break eggs into large measuring bowl with pour spout, add Spike, and beat well. (I used to add a bit of half and half or milk, but lately I like the way they turn out without it.) Pour egg into each muffin cup until it is 3/4 full. I like to stir slightly with a fork. Bake 25-35 minutes until muffins have risen and are slightly browned and set.

Muffins will keep more than a week in the refrigerator. Egg muffins can be frozen and reheated, but I like them best when they are just refrigerated. For best results, thaw in refrigerator before reheating. Microwave on high about 1-2 minutes to reheat.

Mini Cinnamon Rolls Recipe


 Mini Cinnamon Rolls Recipe 



Flatten Crescent rolls; cover with butter, cinnamon, and brown sugar 

Roll into log and slice into mini rolls

Place in muffin pan; bake 8 to 10 min. or until golden brown. 

Icing: 3/4 cup powdered sugar; 1 tbsp skim milk; 1 tsp maple syrup.

Snickerdoodle Muffins

Snickerdoodle Muffins Recipe

1 1/2 c. + 2 Tb. flour
3/4 c. sugar
2 ts. baking powder
1/4 ts. salt
1/4 ts. nutmeg (freshly ground, if possible)
1/2 c. milk
1 beaten egg
1/3 c. melted butter

For topping:
1 ts. cinnamon
1/2 c. sugar
1/3 c. melted butter

Preheat oven to 400.

Combine first five ingredients.  Add milk, egg, and 1/3 c. melted butter, mix gently to combine. Butter a muffin tin, and fill muffin cups 1/2 full and bake for 15-20 minutes, until tops are light brown and springy to the touch.

While muffins are still warm, dip in butter and roll in cinnamon and sugar.  Serve warm.

Nutella Cupcakes

Self-Frosting Nutella Cupcakes
1/4 cup butter, at room temperature
1/4 cup canola or mild vegetable oil
3/4 cup sugar
3 large eggs
1 tsp. vanilla
1 3/4 cup all purpose flour
2 tsp. baking powder
1/4 tsp. salt
1/4-1/2 cup Nutella, at room temperature
Preheat the oven to 325F.
In a medium bowl, beat the butter, oil and sugar with an electric mixer until light and fluffy. Add the eggs and vanilla and beat until smooth.
In a small bowl, stir together the flour, baking powder and salt; add to the butter mixture and beat on low speed just until combined. The batter will be thick. It needs to be in order to swirl in the Nutella!
Divide the batter between 12 paper-lined muffin cups. Drop a spoonful of Nutella on top of each, and swirl through the batter with the tip of a bamboo skewer, knife or other pointy object. Bake for 25-30 minutes, or until springy to the touch. Tilt them in the pan to help them cool. Makes a dozen cupcakes.

Mac & Cheese Bites Recipe


Mac & Cheese Bites

Ingredients:
2 cups uncooked elbow macaroni
1 tablespoon butter
1 egg, beaten
1 cup milk
1 1/2 cups shredded cheddar cheese
1 1/2 cups shredded mozzarella cheese
1/2 cup seasoned dry bread crumbs
2 teaspoons olive oil
1/2 teaspoon salt
Directions:
1. Preheat oven to 350°F. Grease a muffin tin with nonstick cooking spray. In a small bowl, stir together the breadcrumbs, olive oil and salt; set aside.
2. Bring a large pot of lightly salted water to a boil. Add the macaroni and cook for about 8 minutes, it should still be a little firm. Remove from heat, drain and return to the pan; stir in the butter and egg until pasta is evenly coated.
3. Reserve 1/2 cup of sharp cheddar cheese and stir the remaining cheddar cheese, 1 cup of milk and 1 1/2 cups of mozzarella cheese into the pasta. Spoon into the prepared muffin tin. Sprinkle the reserved cheddar cheese and the breadcrumb mixture over the tops.
4. Bake for 30 minutes in the preheated oven, or until the topping is browned. Allow the muffins to cool for a few minutes before removing from the pan in order for them to take shape.
