Mini Pumpkin Bread with Cinnamon Pepita Streusel Topping
Makes 6 mini loaves, or 3 7×3-inch loaves
Ingredients
FOR THE BREAD
3 1/2 cups (445 grams) all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1/2 teaspoon ground cloves
1/2 cup (125 ml) canola or vegetable oil
1/2 cup apple sauce
1 1/2 cups (300 grams) sugar
1/2 cup (127 grams) brown sugar, packed
4 eggs (or 1/4 cup ground flaxseeds combined with 3/4 cup (187 ml) water, for vegan/dairy free)
1 15-ounce can pumpkin puree
2/3 cup (167 ml) water

1 1/2 cups (300 grams) sugar
1/2 cup (127 grams) brown sugar, packed
4 eggs (or 1/4 cup ground flaxseeds combined with 3/4 cup (187 ml) water, for vegan/dairy free)
1 15-ounce can pumpkin puree
2/3 cup (167 ml) water
FOR THE STREUSEL (optional, this bread is still amazing without it)
1/2 cup ( 127 grams) brown sugar
1/2 cup (63 grams) all-purpose flour
1/2 cup pepitas (or pecans, walnuts, or any other nut, chopped)
2 teaspoons ground cinnamon
1/4 cup (half a stick or 56 grams) unsalted butter, melted (or margarine for vegan/dairy free*)
1/2 cup ( 127 grams) brown sugar
1/2 cup (63 grams) all-purpose flour
1/2 cup pepitas (or pecans, walnuts, or any other nut, chopped)
2 teaspoons ground cinnamon
1/4 cup (half a stick or 56 grams) unsalted butter, melted (or margarine for vegan/dairy free*)
*when buying margarine for vegan/dairy free usage, be sure it’s actually vegan. I prefer Earth Balance
To make the bread: Preheat oven to 350 degrees (165 C). Lightly spray 6 mini or 3 7×3-inch loaf pans with nonstick cooking spray with flour, or grease and flour each one; set aside.
In a large bowl, combine the flour, baking soda, salt, cinnamon, nutmeg, ginger, and cloves; set aside.
In a large bowl, or the bowl of a standing mixer, combine the oil and apple sauce. Stir in the sugars until combined, then add the eggs, one at a time, mixing well between each addition. Stir in the pumpkin until thoroughly combined. Stir in the water. Sprinkle about half of the flour mixture over the wet ingredients and mix until just combined. Add the remaining flour mixture, and mix just until no streaks of flour remain. Divide the batter evenly between the prepared pans and set aside while you mix the streusel topping.
To make the streusel: In a medium bowl, mix the sugar, flour, and cinnamon together, whisking until thoroughly combined. Stir in the pepitas or nuts. Drizzle the melted butter over the mixture and stir with a spoon until you have a mixture that resembles lumpy wet sand. Do not break up the clumps too much.
Divide the streusel evenly between the pans, sprinkling it over the top of the bread batter to cover it completely.
Bake mini loaves, three at a time on a rimmed baking sheet, for 20 minutes. Rotate the pans, front to back, and bake for another 20 to 22 minutes, until a toothpick inserted in the center comes out clean. If making large loaves, bake all 3 7×3-inch loaves on a rimmed baking sheet for 25 minutes. Rotate the pans, front to back, and bake for another 25 to 27 minutes, until a toothpick inserted in the center comes out clean. Allow to cool at least 10 minutes before serving, preferably longer, if you can.

Mini Oreo Cheesecakes (no-bake) Recipe
1/2 cup cream, lightly whipped
1 tbsp vanilla essence
1 1/2 teaspoon gelatine, dissolved in 2 tbsp boiling water
6 tbsp caster sugar
250g Philadelphia cream cheese
1 cup of oreo, crushed
1 tbsp vanilla essence

- Beat the cream cheese and sugar until smooth. Fold in the gelatine mixture, vanilla essence, cream and 1 cup of crushed oreo.
- For the crust, I did it the lazy way by using an oreo for the base. (No crushing of oreos, mixing with butter and pressing into tin.)
- For the above, I used plastic strips to make temporary round containers to place the oreo and cream cheese mixture. If you don’t have those, use your trusty muffin pan. Place liners and an oreo into each muffin hole, then fill up with the cream cheese mixture. Freeze – add oreos on top before serving (suggestion from Dorothy – so that the oreos won’t get soggy ;))
Initially placed these in the fridge but I got the same comments from those who tried it – it was a bit too soft for a cheesecake. So I transferred it to the freezer. It didn’t harden (phew!) but became a nice dense cheese cake texture ;)

Ingredients
1 and 1/2 cups Ritz crackers, crushed
2 cups white cheddar cheese, grated and divided
4 tablespoons unsalted butter, melted
4 and 1/2 cups cooked elbow macaroni (about 8 ounces uncooked)
One 5.2-ounce container of Boursin Garlic and Herb cheese
2 tablespoons unsalted butter, cold
2 large eggs
1/2 cup milk
1/4 cup sour cream
1/4 teaspoon salt
Pinch red pepper flakes
Parsley, for garnish, optional

Fruit and Cream Mini-Tarts
Ingredients
- Tart Crust:
- 1-1/2 cups flour
- 1/4 cup superfine sugar
- 1/4 teaspoon salt
- 1/2 cup butter (1 stick), chilled
- 1 egg yolk, broken with a fork
- Cream Filling:
- 2-3/4 cups milk (I use 2-1/2 cups nonfat milk + 1/4 cup whipping cream but any type will work)
- 2/3 cup sugar
- 1/4 cup cornstarch
- 1/8 teaspoon salt
- 4 egg yolks
- 2 tablespoons butter
- 1 teaspoon vanilla extract
Directions
Crust:
- Combine flour, sugar and salt in food processor. Cut butter into 8 slices and add to flour, pulsing several times until mixture resembles oatmeal. Add egg yolk. (Go ahead and add the egg white if you want a sturdier but not quite as tender crust.)Pulse until all ingredients are moistened but not yet a solid ball. (See note below if mixture seems too dry.) Lightly press into a ball, cover and chill 30 minutes.
- Pull off small amount of dough and press into molds with fingers being careful to keep thickness consistent. Use a knife to trim off any extra at the top. Freeze for at least 30 minutes.
- Place frozen tart shells on cookie sheet and cook at 350 degrees for 20-25 minutes. Watch carefully as the time can vary according to the thickness of the crust.
Cream Filling:
- Add milk, sugar, cornstarch, salt, and egg yolks, (in that order) to blender. Blend 5 seconds and pour into 2-quart glass microwave-safe bowl. Microwave 6 minutes on HIGH, whisking until smooth after 3 minutes, then every minute thereafter.
- Add butter and vanilla and whisk until smooth.
Assembly:
- Fill each baked tart shell with cream filling. Top with fruit of your choice. Melt 1/4 cup currant jelly and use a brush to dab some shininess on each piece of fruit. It’s OK if some drips onto the cream.
