Crustless Quiche Recipe

Crustless Quiche

3 eggs

16 ounce(s) low-fat cottage cheese
8 ounce(s) shredded low-fat Cheddar cheese
10 ounce(s) package frozen spinach or chopped broccoli, cooked 

  1. Preheat oven to 375ºF.
  2. In a medium bowl, whisk together eggs and cheeses; add vegetables and mix well.
  3. Mist a 12-inch pie dish with nonfat cooking spray. Pour the mixture into the pie dish and spread evenly
  4. Cook for 35 to 40 minutes, or until mixture is set and top starts to brown.
