Restaurant Style Garlic Mashed Potatoes Recipe



1 1/2 pounds red potatoes (about 8 small), quartered, skίn left on
1 1/2 teaspoons kosher salt, dίvίded
1/4 teaspoon fresh ground black pepper
1 teaspoon garlίc powder
1/2 cup sour cream
1/2 cup grated Parmesan cheese
1/4 cup unsalted butter, cut ίnto pίeces


Directions
Place potatoes ίn a large pot or dutch oven. Add enough water to cover the potatoes. Stίr ίn 1 teaspoon of the kosher salt. Brίng to a boίl, then reduce heat, cover and sίmmer about 20 to 25 mίnutes. Meanwhίle, place the remaίnίng 1/2 teaspoon kosher salt, pepper, garlίc powder, sour cream, Parmesan cheese and butter ίn the bowl of an electrίc mίxer. When potatoes pίerce easίly wίth a parίng knίfe, remove from heat and draίn. Add potatoes to the bowl wίth the other ίngredίents and mίx on medίum speed untίl mostly smooth (there may be some lumps, but we usually don’t mίnd that). Serve.

Ranch BLT Pasta Salad Recipe

Ranch BLT Pasta Salad Recipe



Ingredients:
8 ounces radiatore pasta (or another type of medium-sized pasta)
1 bottle Hidden Valley® Original Ranch® Salad Dressing
1 + 1/2 cup diced tomatoes, seeds removed
1 cup cubed Swiss cheese
1/2 cup thinly sliced red onions
1 pound bacon, cooked crispy and chopped
2 cups finely chopped romaine or iceberg lettuce
coarse salt and fresh black pepper

Instructions:
  1. Cook the pasta according to package directions to al dente in plenty of salted water.
  2. Drain pasta, toss with dressing to lightly coat so they don’t stick together and refrigerate until cold.
  3. In a large bowl toss the cold pasta with the tomatoes, Swiss, onions, bacon and lettuce.
  4. Add enough dressing to generously coat everything and season to taste with salt and pepper.

Hawaiian Macaroni Salad Recipe



Ingredients:
1 lb elbow macaroni
1/2 cup apple cider vinegar
2 cups whole or 2% milk, divided (skim or 1% is just too thin)
2 cups mayonnaise, ideally Best Foods' or Hellmann's, divided
1 Tbsp brown sugar
4 green onions, thinly sliced
1 large carrot, peeled & grated
1 celery stalk, minced
Salt & pepper



Bring 4 quarts of water to a boil. Add 1 Tbsp salt and the macaroni; cook until VERY soft, about 15 minutes. Drain and return to pot; add the cider vinegar and toss until absorbed. Let cool for 10 minutes.
Meanwhile, whisk together 1 1/2 cups of the milk, 1 cup of the mayonnaise, the brown sugar, 1/2 tsp of salt and 2 tsp pepper.
Once the cooked pasta has cooled for 10 minutes, whisk in the dressing. Let cool completely.
Add the remaining 1/2 cup milk and 1 cup of mayonnaise, along with the scallions, carrot and celery. Stir to combine, then season to taste with salt & pepper. Chill for at least one hour before serving.

Healthy Onion Rings Recipe




Place slices of onion in a shallow dish. Pour the buttermilk over the top and let themsoak for about 1 - 2 hours, refrigerated.

Preheat oven to 450 degrees. Line baking sheet with parchment paper or foil.

Combine panko, bread crumbs and corn flakes and place half of the crumbs in a large dish, season with salt. Reserve the rest for when the first batch is used up. This should help avoid clumping and they should stick better to the onions.

Dip each soaked onion ring into the crumb mixture; coat well. Place rings onto two cookie sheets. Lightly spray with oil. Bake about 12 minutes or until golden brown.Serve immediately.

Scalloped Potatoes Recipe

Scalloped Potatoes Recipe



  • 4-5 cups thinly sliced potatoes
  • 3T butter
  • 3T flour
  • 1 1/2 cups of milk
  • 1tsp salt
  • 1 dash cayenne pepper
  • 1 cup grated cheese
  • 1/2 cup grated cheese for top (optional, I think)
  • paprika


In a small pan, melt butter, blend in flour. Let cook for a minute.
Add all of the cold milk, whisk.
Season with salt and pepper.
Cook on low until smooth and boiling.
Reduce heat and stir in cheese.
Place 1/2 of the potatoes in a greased pan.
Pour 1/2 of the cheese sauce over the potatoes.
Repeat with remaining potatoes and cheese
Sprinkle remaining cheese on top
Top with paprika.
Bake 1 - 1 1/2 hours at 350 F.

Texas Potatoes Recipe

Texas Potatoes Recipe


1 lbs. Ground beef
2 to 4 potatoes (depending on how thin you want to slice it) uncooked
3/4 cup diced onion (you can always use more)
1 clove garlic pressed or diced
One package of the baby bella mushrooms sliced
Dried parsley or fresh, about a Tbls.
1 tsp. of garlic salt
1 tsp. of onion powder
A few pinches of pepper
1 can of cream of mushroom soup
1 cup or so of cheddar and jack cheese (you can change to a cheese that you may prefer more)
Preheat oven to 375

Directions: Begin browning the meat in a skillet. Add the onions and sliced mushrooms. Add the seasonings. While the ground beef is cooking start slicing the potatoes. Spray the casserole dish first, and then begin lining the bottom with the sliced potatoes. When the meat is closed to brown add in the fresh garlic. I add it in towards the end so that the garlic doesn’t burn. When mixture is finished, add in the can of cream of mushroom soup. Once that mixture is well mixed begin scooping some of the mixture on the potatoes. Then add another layer of potatoes. Then scoop the remaining amount on top of those potatoes. Cover the dish with foil. This takes about 45 minutes to an hour to cook the potatoes depending on how thick or thin you slice them. I will test the potatoes with a fork, if they are tender I will take the foil off and sprinkle the cheese on top and cook again until the cheese is melted

Oven-Roasted Cauliflower Recipe

Ingredients 

5 cup (up to 6) cauliflower, florets about 1 1/2 inches in diameter (from 1 medium cauliflower)
1⁄4 cup extra-virgin olive oil
1 tbsp garlic, sliced
2 tbsp lemon juice
1 tsp salt
1⁄2 tsp black pepper
2 tbsp parmesan cheese, grated
1 chives, Chopped, for garnish



Directions

Preheat the oven to 500 degrees F.

Place the cauliflower florets in a large saute pan or a roasting pan. Drizzle the olive oil over the cauliflower, and season with the garlic, lemon juice, salt and pepper.

 Place the saute/roasting pan in the oven and cook for 15 minutes, stirring occasionally to ensure even roasting. Remove from the oven and sprinkle with the Parmesan. Garnish with chopped chives and serve immediately while still warm.

Spinach Mashed Potatoes Recipe

                                                        1 (5 pound bag) of Yukon gold potatoes
                                                        6 ounce bag of spinach
                                                        3 green onion, chopped
                                                        1 stick of butter
                                                        3 ounces cream cheese
                                                        1/2 cup of half and half
                                                        2 garlic cloves
                                                        Salt and pepper


          1) Peel potatoes and garlic place them in a pot of cold water, add salt and boil for
          about 45 minutes....Place the spinach and green onions in the boiling potatoes and
          cook for about 3 to 5 minutes. Drain.
          2) Mash everything in pot and add butter, cream cheese, half and half, salt and
          pepper.
