Smore’s Pancakes Recipe

Smore’s Pancakes Recipe

Makes: About 6 Pancakes that are 5” in diameter

Chocolate Pancakes
½ cup All Purpose Flour
2½ tsp. Baking Powder
1 tsp. Salt
2 tbsp. Cocoa Powder
2 tbsp. Brown Sugar
1 Egg, lightly beaten
1 ½ cups Milk
3 tbsp. Melted Butter


Marshmallow Sauce
1 cup Marshmallow Fluff
2 tbsp. Water

½ cup Graham Crackers, crushed (For Topping)

To make the pancakes, whisk together the wheat flour, all purpose flour, baking powder, salt, cocoa powder, and brown sugar.  Make a well in the center and add the egg, milk, and melted butter.  Whisk together until fully incorporated and smooth.

Cinnamon Vanilla French Toast Recipe


Ingredients
6 slices of thick bread
5 eggs
2 tablespoons milk (I use 2%)
1 teaspoon vanilla extract
1/4 teaspoon cinnamon
1 tablespoon butter
1/8 cup powder sugar (optional)


Directions
Beat eggs into a medium size bowl. Add milk, vanilla, and cinnamon. Mix together. The cinnamon will clump slightly and that is okay. 

On the stove, over medium heat, melt 1 tablespoon of butter and coat bottom of a large non-stick skillet. 

Soak each piece of bread in the egg batter and place onto the skillet. Cook for 4-5 minutes and then flip over and cook the other side. 

To serve I like to cut each slice into triangles and layer them on a square plate. I always finish it by off by using a sifter to sprinkle a little powder sugar on top. It looks pretty and compliments the cinnamon. This recipe serves 3 - 6 people.

Baked Pumpkin Pie Oatmeal Recipe

Ingredients
  • 1/2 cup regular rolled oats
  • 1/4 tsp baking powder
  • 1/2 tsp pumpkin pie spice
  • pinch of salt
  • 1/3 cup milk of choice
  • 1/4 cup pumpkin puree
  • 1/2 tsp vanilla extract
  • 1 tbsp maple syrup

Instructions
  • Preheat oven to 350 degrees F. Spray a single-serving ramekin with nonstick cooking spray.
  • In a small bowl, mix oats, baking powder, pumpkin pie spice, and salt until combined.
  • In a medium-sized bowl, mix together pumpkin puree, almond milk, vanilla extract, and maple syrup.
  • Add dry ingredients to mix ingredients and stir until combined.
  • If you'd like to add any extra ingredients (coconut oil, dried fruit, nuts, sunflower seeds), do so now.
  • Pour into the prepared ramekin and bake for 18-22 minutes.

Cinnamon Roll Waffles Recipe

Ingredients
  1. 1 can Pillsbury® Grands!® refrigerated cinnamon rolls with cream cheese icing
  2. 1 cup powdered sugar
  3. 3 tablespoons milk
  4. 1 teaspoon vanilla

Instructions
  1. Heat waffle maker; spray with cooking spray. Remove cinnamon rolls from can; set icing aside.
  2. For each waffle, place 1 cinnamon roll in center of waffle maker; close. Bake 3 to 4 minutes or until waffle is thoroughly cooked and golden brown.
  3. Meanwhile, in small bowl, stir together reserved icing, powdered sugar, milk and vanilla until glaze is smooth.
  4. Serve glaze over hot waffles.
Notes
  1. Be sure to spray the waffle iron in between each waffle. The sugar from the cinnamon roll can make the waffles stick.
  2. These are also delicious served with real maple syrup instead of the cream cheese glaze. Add some toasted pecans for extra crunch.

Ingredients

3eggs separated
½cup half and half
¼cup flour
1pinch of salt
tablespoons melted butter
1tablespoon Grand Marnier
½cup strawberries + 1 tablespoon sugar(you can use any type of berries you want)



Directions




Preheat broiler. Beat two of the egg yolks with the half-and-half (reserve the third yolk for another purpose). Add the flour slowly, stirring just enough to combine. Stir in the sugar, salt, melted butter and Grand Marnier. Beat the egg whites until they form soft peaks. gently mix egg whites into batter. Heat a lightly greased 8-inch nonstick ovenproof skillet, or a heavy cast-iron skillet, over moderately high heat or until oil bubbles. Pour the batter into the pan. Reduce the heat to medium and cook until bottom of the pancake is browned and bubbles appear around the edges, for 5 to 8 minutes. Arrange the berries gently on top of the batter. Place the pan 4 to 5 inches below the broiler and cook until the top of the pancake is brown and the center is just set but still soft. Now place the pan in a 450 F oven for 4 to 5 minutes. Gently slide the pancake onto a warmed serving place, dust with powdered sugar and whisk it to the table. Serve with more sliced strawberries and raspberries.

Bacon Wrapped Muffin Recipe


Makes 12 cups
12 slices bacon
8 eggs
1/2 cup shredded cheddar cheese
pinch of salt
1/4 tsp black pepper

Preheat oven to 350 degrees.
Whip the eggs, salt, pepper and cheese with a fork. Spray non stick spray in 12 muffin tins. Wrap each piece of bacon inside the sides of each muffin cup.

Pumpkin Spice Breakfast Quinoa Recipe

Ingredients:

1/2 cup milk – I used almond milk but any milk will work
1/2 cup water
1/2 cup uncooked quinoa, rinsed and drained
1/4 cup + 2 tablespoons pumpkin puree
2 tablespoons pure maple syrup
1/2 teaspoon vanilla extract
1 teaspoon pumpkin pie spice
Pinch of salt
2-4 tablespoons chopped pecans


Directions:

Bring milk and water to a boil in a small to medium sized saucepan.  Add quinoa, cover, reduce heat to simmer, and let cook 15 minutes.  Remove from heat and let stand 5 minutes.  Uncover and fluff with a fork, then stir in the pumpkin, maple syrup, vanilla, pumpkin pie spice, and salt.  Taste and adjust any amounts to your liking (i.e. add more sweetness or spices).  Divide into two bowls (add milk if desired) and top with desired amount of pecans.

Ingredients

12precooked (frozen) breakfast
sausage patties, thawed
2-3sliced tomatoes
2-3sliced avocados
12eggs
1c. milk
1 Pound pkg. frozen hash browns, thawed
1c. cheddar cheese (shredded)
1tsp. salt
½tsp pepper
extra cheddar cheese for topping
9X 13 GLASS PAN

Directions

◦Layer the bottom of a greased 9x13 pan with sausage topped with tomatoes and avocado. ◦In a bowl, beat eggs and milk. Stir in all other ingredients. Pour hash and egg mixture over the sausage, tomatoes, and avocados. ◦Bake at 350 for 35-45 min or until well set. Top with extra cheddar right after pulling out of the oven so it melts all over the top. Top with salsa or sour

Buttermilk-Blueberry Breakfast Cake Recipe

Ingredients
 ½ cup unsalted butter, room temperature 
2 tsp. lemon zest or more — zest from 
1 large lemon ⅞ cup* + 1 tablespoon sugar** 
1 egg, room temperature 
1 tsp. vanilla 
2 cups flour (set aside ¼ cup of this to toss with the blueberries) 
2 tsp. baking powder 
1 tsp. kosher salt
2 cups fresh blueberries 
½ cup buttermilk*** ⅞ cup = ¾ cup + 2 tablespoons 

This 1 tablespoon is for sprinkling on top To make homemade buttermilk, place 1 tablespoon of vinegar or lemon juice in a liquid measuring cup. Fill cup with milk until it reaches the 1-cup line. Let stand for five minutes. Use only ½ cup of the prepared mixture for the recipe. Directions 1. Preheat the oven to 350ºF. Cream butter with lemon zest and 7/8 cup of the sugar until light and fluffy. 2. Add the egg and vanilla and beat until combined. Meanwhile, toss the blueberries with ¼ cup of flour, then whisk together the remaining flour, baking powder and salt. 3. Add the flour mixture to the batter a little at a time, alternating with the buttermilk. Fold in the blueberries. 4. Grease a 9-inch square baking pan (or something similar) with butter or coat with non-stick spray. Spread batter into pan. Sprinkle batter with remaining tablespoon of sugar. Bake for 35 to 45 minutes. Check with a toothpick for doneness. If necessary, return pan to oven for a couple of more minutes. (Note: Baking for as long as 10 minutes more might be necessary.) Let cool at least 15 minutes before serving.

Ingredients

4 slices of Bread
3 Eggs
1/2 cup Cooked Sausage
4 slices of American Cheese
2 TBSP Milk
I Can’t Believe It’s Not Butter


Directions

  • Step 1 – Mix Eggs, Sausage and Milk together in a dish
  • Step 2 – Scramble Eggs
  • Step 3 – Butter one side of each slice of bread with I Can’t Believe It’s Not Butter
  • Step 4 – Place a piece of Bread, butter side down, in a frying pan
  • Step 5 – Add a slice of cheese, egg mixture and another slice of cheese before putting the second slice of bread with butter side facing up on top
  • Step 6 – Fry for a couple minutes on each side, watching carefully so you do not burn the bread

Gluten Free Waffle Pizza Recipe

1 frozen gluten-free waffle
2 -3 tablespoons pizza sauce 
6 pepperoni slices
2 tablespoons mozzarella cheese



1. Toast waffles until browned and crisp.
2. Heat broiler.
3. Spread a large spoonful of pizza sauce on tops of waffles.
4. Top with pepperoni or other toppings of your choice.
5. Cover with mozzarella cheese.
6. Broil until cheese melts and brown slightly on top.

Ingredients:
(2) 16oz sour cream
2 cups shredded sharp cheddar cheese
(2) 3oz bags real bacon bits
1 packet dried Ranch Dip mix
1 bag frozen shredded hash brown potatoes
Directions:
1.  Preheat oven to 400°.  Spray 9×13 baking pan with non-stick spray.
2.  Mix all of the ingredients together in a large bowl. Pour casserole mix into pan.  Bake 50 – 60 minutes or until edges are bubbling and top is nice and brown.

Banana Cranberry Bran Muffins Recipe

2 ripe bananas
1 C almond milk
1 egg
1/3 C coconut oil
1 1/2 C of high fiber or bran cereal (I used Kashi Go Lean)
1/4 C dried cranberries
1 1/4 C whole wheat flour (I used white whole wheat, which gives it a lighter color.)
1 T baking powder
1/2 tsp. salt
1/2 tsp almond extract
1/4 C raw cane sugar

Directions:
Mix bananas, milk, egg and oil. Add high fiber cereal and let it stand for 15 minutes.
Beat cereal mixture well. Add remaining ingredients and stir until they are mixed in.
Spoon evenly in to 12 muffin cups.
Bake at 400 degrees for 18-20 minutes.

Pumpkin French Toast Bake


Ingredients
  • 5 1/2 – 7 1/2 cups 1-inch bread cubes (depending on type of bread)*
  • 7 large eggs
  • 2 cups milk (any kind)*
  • 1 tsp vanilla extract
  • 1 1/2 tsp pumpkin pie spice
  • 1/4 cup pumpkin BUTTER (or 1/2 cup pumpkin puree)*
  • 3-4 tablespoons brown sugar for topping
  • nuts, like pecan or walnuts (optional)


Instructions
  1. Cut any kind of bread into 1-inch cubes – I recommend a crusty, whole grain variety, but sandwich bread will work, too. Just use enough slice to fill a lightly greased 9×13 baking dish quite full.
  2. In a large bowl, whisk together eggs, milk, vanilla, pumpkin butter and pie spice until well combined. Pour over bread and push down with a spoon or your hands until it’s all soaked and mostly covered. Cover with saran wrap or lid and refrigerate overnight.
  3. In the morning, preheat oven to 350 degrees, uncover and top with brown sugar, additional pumpkin pie spice and nuts (optional). Bake for 35-45 minutes or golden brown and no longer wet.
  4. Serve immediately with maple syrup, honey or agave nectar. Store leftovers in the refrigerator covered for up to a couple days.
Notes
* For the bread cubes, just use as much bread as it takes to fill the bottom of your dish generously, plus up about 1 to 1.5 inches. If you’ve added too much to soak up the liquid, just remove some. And if it looks too wet, add some more bread.
* I HIGHLY recommend using pumpkin butter as it has a concentrated pumpkin flavor and is much sweeter than puree. But if using puree instead of butter, it’s important to compensate the flavor by adding a bit more puree, pumpkin pie spice, and a little agave nectar, brown sugar or maple syrup to the batter. Otherwise, it will lack that delicious fall, pumpkin flavor you’re going for.
* I used 2%, but use skim or low-fat for a lighter recipe. Alternatively, use non-dairy such as soy or almond.
