Low-Carb Broccoli Bites Recipe

Pre-heat oven to 375 degrees.
16 oz Chopped Brococoli
3 Eggs
1 cup crushed French’s Fried Onions
1 1/2 cups 2% Sharp Cheddar Cheese
Salt & Pepper
Mix all ingredients well, adding salt and pepper to taste. Line Cookie sheet with parchment paper. Using hands form into balls. Bake for 25 minutes at 375 degrees.
Yields 20.
FYI- Two Weight Watchers Points each.

Weight Watchers Parmesan Chicken Recipe

Ingredients:

1/4 cup parmesan cheese, grated
2 tablespoons dried Italian seasoned breadcrumbs
1/8 teaspoon paprika
1 teaspoon dried parsley
1/2 teaspoon garlic powder
1/4 teaspoon fresh ground pepper
4 boneless skinless chicken breasts

Directions:

1 - Preheat oven to 400 degrees.
2 - In resealable plastic bag, combine cheese, crumbs and all seasonings; shake well.
3 - Transfer mixture to plate; dip each chicken breast in cheese mixture, turning to coat all sides.
4 - Arrange on nonstick baking sheet.
5 – Bake until chicken is cooked through, 20-25 minutes.

Weight Watchers M&M Cheesecake Squares Recipe


Ingredients
  • 1 (8 ounce) package cream cheese, softened
  • 3/4 cup M&M
  • 1/2 cup walnuts, chopped
  • 1 egg
  • 1/3 cup margarine
  • 1 cup flour
  • 1/4 cup sugar, granulated
  • 1/3 cup sugar, brown packed
  • 1 teaspoon vanilla extract
Directions
  • Preheat the oven to 350 degrees F.
  • Beat the margarine and brown sugar until light and fluffy.
  • Add the walnuts and flour; mix well.
  • Reserve 1/2 cup of the crumb mixture; press the remaining crumb mixture into bottom of a 8″ square pan.
  • Bake at 350 degrees for about 10 minutes.
  • Combine the softened cream cheese, granulated sugar and vanilla; using an electric mixer, mix at medium speed until well blended.
  • Add the egg; mix well.
  • Layer 1/2 cup of the M&M candies over the crust; top with the cream cheese mixture.
  • Combine the remaining candy and reserved crumb mixture; mix well.
  • Sprinkle the crumb mixture over the cream cheese mixture.
  • Bake at 350 degrees for about 20 minutes.
  • refrigerate at least 2 hours or overnight before serving.

Chocolate Cream Cheese Surprise Cupcakes Recipe



Ingedients

for the filling:

8 oz. reduced fat cream cheese, softened
1/3 cup sugar
1 egg
1/8 tsp salt
1 cup mini semi-sweet chocolate chips

for the cupcake:

3 cups all-purpose flour
2 cups sugar
2/3 cup cocoa powder
2 tsp baking soda
1 tsp salt
2 cups water
2/3 cups vegetable oil
2 Tbsp white vinegar
2 tsp vanilla extract

Directions 

Pre-heat the oven to 350 degrees F.  Line muffin cups with paper liners. 

Prepare the filling- beat the cream cheese, sugar, egg and salt in a bowl until smooth and creamy.  Stir in the chocolate chips.

Stir together the flour, sugar, cocoa, baking soda and salt in a large bowl.  Add the water, oil, vinegar and vanilla.  Beat for 3 minutes.  Fill muffin cups 2/3 full with batter. Spoon 1 level Tbsp of the filling into the center of each cupcake. 

Bake 20 to 25 minutes or until toothpick inserted in the cake portion comes out clean.  Let cool for 5 minutes in the pans.  Remove from pans to wire rack.  Cool completely.

Grilled Bruschetta Chicken



Grilled Bruschetta Chicken


Ingredients:
4 small boneless skinless chicken breast halves
1/2 cup KRAFT Sun-Dried Tomato dressing, divided
2 tomato, finely chopped
1/2 cup shredded part-skim mozzarella cheese
1/4 cup chopped fresh basil or 1 tsp. dried basil leaves

Instructions:
Place a large sheet of heavy-duty foil over half of grill grate; heat grill to medium heat. Meanwhile, place chicken in resealable plastic bag. Add 1/4 cup dressing and seal bag. Turn bag over several times to evenly coat chicken with dressing. Refrigerate 10 minutes (I marinate it all day if I remember in time). Remove chicken from bag; discard bag and dressing.

Grill chicken on uncovered side of grill for about 6 minutes. Meanwhile, combine remaining 1/4 dressing, tomatoes, cheese and basil.

Turn the chicken over and place cooked-side up, on foil on the grill. Top with tomato mixture. Close lid. Grill 8 minutes or until chicken is done.

Banana Pancake Bites


Banana Pancake Bites

Ingredients:
1 cup Bisquick Heart Smart Pancake & Baking Mix
2/3 cup skim milk
½ cup reduced calorie breakfast syrup
1 large ripe banana, chopped into small pieces

Directions:
1.    Pre-heat the oven to 350. Lightly mist a 24 count mini muffin tin with cooking spray.
2.    In a large bowl, stir together Bisquick mix, milk and syrup until thoroughly combined.
3.    Divide the batter evenly amongst the prepared mini muffin tin cups. Sprinkle the chopped banana pieces over the tops of each muffin cup. Bake in the oven for 12-14 minutes until golden and cooked through. 

Yields 24 pancake bites. WW P+: 1 per bite (a serving of four pancake bites is 4 P+) (P+ calculated using the recipe builder on weightwatchers.com)

Weight Watchers Pumpkin Bread


Only 500 Calories for the WHOLE loaf
Batter:
1-1/2 c. pureed pumpkin
1/2 c. unsweetened applesauce
1 whole egg
3 egg whites
1 c. all-purpose flour
2/3 c. whole wheat flour
1/2 c. Stevia Cup For Cup sweetener
1/2 c. granulated sugar
1 t. baking soda
1/2 t. ground cinnamon
1/2 t. ground nutmeg
Cream filling
8 oz. reduced fat cream cheese
1/4 c. granulated sugar
1 T. all-purpose flour
2 egg whites
1 t. vanilla extract
1. For the Batter: With an electric mixer, beat the pumpkin, applesauce, egg, and egg whites on medium speed until smooth. In a separate bowl, combine the flours, Stevia, sugar, baking soda, cinnamon and nutmeg. Slowly mix the flour mixture into the pumpkin mixture.
2. For the cream cheese filling: Beat the cream cheese, sugar, vanilla, egg whites and flour until creamy and smooth.


3. Grease 2 8x4x2″ loaf pans. Divide half of the batter between the two pans. Pour half of the filling in one pan and the other half in the second pan and smooth with the back of a spoon. Top with the remaining batter.

4. Bake in a 350 degree oven for about 40 minutes, or until a toothpick inserted comes out clean. Don’t overbake or your bread will be dry on the edges. Cool and remove from pans. Store in the refrigerator in an airtight container.

One serving (2 slices) = about 100 calories

Let's do everything Pinteresting!

In the past six months, I have found and become addicted to the new social networking site phenomenon, Pinterest. There are so many fantastic ideas on there from crafts, to DIY interior design, and great even more great ideas for anyone on a budget. 


My most favorite part of pinterest, however, is all the amazing recipe ideas! I find at least 50 new things I want to cook every single day on there! My mother and sister-in-law are the exact same way. 


I've made this blog to help my chronicle recipes that I have cooked and want to cook on Pinterest. I hope to turn my kitchen in to a whirlwind of creativity and delicious foods! Hopefully it will inspire you guys to cook more creative things as well!

Since this is my first post, I will keep it simple. This is one of my most favorite easy-to-make tips that I have learned:

Mason Salad Jars

This great idea comes from Karen Nichols (check out her blog here).

Basically, you make up these different salads and stack the ingredients just right in the Mason Jars so that they are fresh for up to one whole week. They are also weight watcher friendly. :)

This is a fantastic idea and I started doing it last week. This way, I had a healthy, delicious, prepared lunch every day. It really helps me to eat healthier. It's great to grab and take to work or school.
