Quinoa Mac and Cheese Recipe

Quinoa Mac and Cheese Recipe

1 cup uncooked quinoa, rinsed and drained
vegetables of your choice- I used onion, zucchini and tomato
garlic, salt, pepper and other seasonings
1 cup cheese of your choice (I used a mix of mozzarella, cheddar, and parmesan)
1/2 cup milk
1 egg
olive oil, water (or stock)
Saute your vegetables in a little olive oil, salt and pepper until partially translucent.

Add the quinoa and toast for 5 minutes or so until opaque. Add your liquid- I used water but you could use chicken or vegetable stock for more flavor. The amount of liquid is double your quinoa- so 2 cups of water to 1 cup quinoa. Add additional seasoning- dried herbs, red pepper flakes, etc. Lower the heat and let it simmer for 10-12 minutes, stirring occasionally, until most of the liquid is absorbed. In a bowl, whisk together the milk, egg, and grated cheese. Pour in the quinoa mixture and combine. It will look gross at this point. Pour into a greased pan and top with breadcrumbs or more cheese (optional). I used panko and parmesan. Bake at 350 for 30-35 minutes depending on the depth of your dish.

Crispy Cheddar Chicken Recipe

Crispy Cheddar Chicken Recipe

2 lbs chicken tenders or 4 large chicken breasts 2 sleeves Ritz crackers 1/4 teaspoons salt 1/8 teaspoon pepper 1/2 cup whole milk 3 cups cheddar cheese, grated 1 teaspoon dried parsley Sauce: 1 10 ounce can cream of chicken soup 2 tablespoon sour cream 2 tablespoon butter
Crush crackers. If using chicken breasts and not tenders, cut each chicken breast into 3 large pieces. Pour the milk, cheese and cracker crumbs into 3 separate small pans. Toss the salt and pepper into the cracker crumbs and stir the mixture around to combine. Dip each piece of chicken into the milk and then the cheese. Press the cheese into the chicken with your fingers. Then press the cheesy coated chicken into the cracker crumbs and press it in. Spray a 9×13 pan with cooking spray and lay the chicken inside the pan. Sprinkle the dried parsley over the chicken. Cover the pan with tin foil and bake at 400 degrees for 35 minutes. Remove the tin foil, bake for an additional 10-15 minutes, or until the edges of the chicken are golden brown and crispy. In a medium sized sauce pan combine the cream of chicken soup, sour cream and butter with a whisk. Stir it over medium high heat until the sauce is nice and hot. Serve over the chicken.

Pepperoni & Cheese Bread Recipe

Pepperoni & Cheese Bread Recipe

Ingredients:
Pizza dough (I have used Pillsbury and Publix bakery dough – I think we prefer Publix, but it’s difficult to roll out)
Mozzarella cheese, sometimes I add in Cheddar for some variety.
Fresh Spinach leaves
Pepperoni
Egg White
Parmesan cheese

Roll out the dough on a cookie sheet and start to layer your spinach, cheese & pepperoni.  There really is no limit to what kind of ingredients you use.  Just depends on what your family likes.  The good news is my kids don’t really notice the spinach!
Once all of your ingredients are layered on, you can begin to roll the dough up.  When you are done rolling, pinch the seam and both ends together so the cheese doesn’t ooze out.  Make sure the seam is on the bottom, touching the cookie sheet.
I usually cook at 350 for 20+ minutes.  You’ll just want to keep an eye on it in case it needs more or less time in your oven.   Once it starts to brown you can brush it with a little egg white and sprinkle with parmesan cheese to make it pretty.
Let it cool for 5-10 minutes and slice with a serrated bread knife.

Chicken Alfredo Roll-ups Recipe

Chicken Alfredo Roll-ups Recipe

9 lasagna noodles
2 ½ cups alfredo sauce
2 cups cooked, shredded chicken
oregano
garlic salt
3 cups shredded Mozzarella, or cheese of your choice

Spray an 8x8 pan with non-stick spray and pour ½ cup alfredo sauce, or just enough to cover the bottom of the pan. Boil 8-10 cups water in a large pan, cook lasagne noodles until al dente. (I usually cook 1 or 2 extra just because lasagna noodles always seem to break on me when I am stirring them.)
Now this is the important part! Drain and rinse the noodles with cold water to prevent them from sticking to each other. Then, lay out each noodle individually and blot dry with a paper towel.

Spread about 2 Tbs. alfredo sauce over each noodle. (if there is too much sauce you will have a big mess on your hands!) Sprinkle oregano and garlic salt on top of sauce. Take 1/9 of the shredded chicken and spread it out evenly over each noodle. Add approx. 3 Tbs. cheese. To roll up, start at one end and roll the noodle over the toppings. You will need to lift the noodle a little to prevent squishing out the inside ingredients while rolling.

Place the roll-ups in the pan, one by one, seam-side down so they don't come undone. Once they are all in the pan, pour the remaining alfredo sauce over the top. Top with remaining cheese. Bake at 350 degrees for about 30 minutes, or until the cheese is completely melted on top.

Cracker Barrel Macaroni and Cheese Recipe

Cracker Barrel Macaroni and Cheese Recipe

2 tablespoons butter
2 tablespoons flour
1 cup low sodium chicken broth
1/2 cup cream
2 1/2 cups shredded colby cheese
2 1/2 cups uncooked pasta
1 teaspoon salt

In a saucepan, melt butter over medium low heat; add the flour a little bit at a time whilst whisking to make a roux.

Heat the broth.

Next, add the broth to the roux, and stir with the whisk; this will thicken as it heats.

Add a little cream, watching for the desired consistency.

Bring 4 cups water to a boil in a separate pot; add salt and pasta.

In the other pot, add shredded cheese a 1/4 of a cup at a time whilst stirring with a spoon. When you have about one cup of cheese in you can add the rest of the cheese.

Cook the pasta until al dente; strain and combine with the cheese sauce.

Pour the mix into a casserole and bake uncovered in a preheated oven set to 350°F for about 10 minutes.

Keep an eye on the mac & cheese, you want it to brown around the edges and in patches on top.

Remove and let stand for 10 minutes before serving. Enjoy!
