Perfect Guacamole Recipe


INGREDIENTS

  • 2 ripe avocados
  • 1/2 red onion, minced (about 1/2 cup)
  • 1-2 serrano chiles, stems and seeds removed, minced
  • 2 tablespoons cilantro leaves, finely chopped
  • 1 tablespoon of fresh lime or lemon juice
  • 1/2 teaspoon coarse salt
  • A dash of freshly grated black pepper
  • 1/2 ripe tomato, seeds and pulp removed, chopped
Garnish with red radishes or jicama. Serve with tortilla chips.

METHOD

1 Cut avocados in half. Remove seed. Scoop out avacado from the peel, put in a mixing bowl. (See How to Cut and Peel an Avocado.)
2 Using a fork, mash the avocado. Add the chopped onion, cilantro, lime or lemon, salt and pepper and mash some more. Chili peppers vary individually in their hotness. So, start with a half of one chili pepper and add to the guacamole to your desired degree of hotness. Be careful handling the peppers; wash your hands thoroughly after handling and do not touch your eyes or the area near your eyes with your hands for several hours.
Keep the tomatoes separate until ready to serve.
Remember that much of this is done to taste because of the variability in the fresh ingredients. Start with this recipe and adjust to your taste.
3 Cover with plastic wrap directly on the surface of the guacamole to prevent oxidation from the air reaching it. Refrigerate until ready.
4 Just before serving, add the chopped tomato to the guacamole and mix.
Variations
For a very quick guacamole just take a 1/4 cup of salsa and mix it in with your mashed avocados.
You don't need to have tomatoes in your guacamole.
To extend a limited supply of avocados, add either sour cream or cottage cheese to your guacamole dip. Purists may be horrified, but so what? It tastes great. In fact, guacamole with a little cottage cheese added to it is my favorite.

Potato & Bacon Potato Salad



Ingredients

4cups cubed red potatoes
1cup chopped onion
7bacon strips, cooked and crumbled
2tablespoons minced fresh parsley
1-⅓cups mayonnaise
3tablespoons grated Parmesan cheese
3tablespoons prepared ranch salad dressing
2tablespoons prepared mustard
4teaspoons white vinegar
½teaspoon minced garlic
¼teaspoon salt
¼teaspoon pepper

Directions

Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 10-15 minutes or until tender. Drain. In a large bowl, combine the potatoes, onion, bacon and parsley. In a small bowl, combine the remaining ingredients. Pour over potato mixture; toss to coat. Refrigerate for 1 hour or until chilled. Yield: 8 servings.

French Onion Soup

INGREDIENTS
3pounds yellow onions, cut into 1/8-inch pieces
3tablespoons unsalted butter
1/2teaspoon table salt, plus more as needed
1pinch sugar
8cups water , plus more as needed
1tablespoon all-purpose flour
1sprig fresh thyme
1/4cup dry white wine
1baguette , crusty
8ounces Gruyère cheese-I sliced it thick and placed it over the top of the crock…..the cheese melted mostly into the soup and a little off to the sides, but it created a thick, even layer this way.

INSTRUCTIONS

  1. Melt butter in a large Dutch oven or soup pot over medium heat.
  2. Add the onions, 1/2 teaspoon salt, and sugar. Toss to evenly coat.
  3. Cover and cook for 10 minutes.
  4. Take the cover off, and cook, stirring frequently, until the onions are lightly browned.  I cooked mine for a little less than 90 minutes.
  5. At this point, stir every 5 minutes and add water (a tablespoon at a time to loosen up the dark brown stuff that forms on the bottom of the pan).
  6. Continue to cook until the onions are an even dark brown color, an additional 30 minutes longer or so.
  7. Add the flour and stir for two minutes.
  8. Add 8 cups water and thyme to the onions and bring to a boil.
  9. Lower heat  and simmer for 20 minutes.
  10. Add white wine and simmer 10 minutes longer.
  11. Add salt to taste.
  12. Meanwhile, heat the oven to 325 degrees and adjust a rack to the upper middle position.
  13. Cut the baguette into 3/4 inch slices and arrange on a single layer on a cookie sheet.
  14. Bake until the bread is dry, about 10 minutes. Remove bread slices and set aside.
  15. Heat broiler and place 6 heatproof bowls in a baking sheet. Fill each bowl with about 2 cups soup. Top each with two baguette slices and evenly distribute cheese slices over the bread. Broil until well browned and bubbly, about ten minutes. Cool for five minutes before serving.

Cucumber, Tomato, and Onion Salad

Ingredients 

1 pound cucumbers (about 2 cucumbers), peeled and thinly sliced
1 pint cherry tomatoes, halved
1/2 Vidalia onion, very thinly sliced
2 tablespoons chopped fresh parsley leaves
1 tablespoon apple cider vinegar
1 tablespoon olive oil
Salt and freshly ground black pepper

Directions

In a large serving bowl, toss together the cucumbers, cherry tomatoes, onion, parsley, vinegar, olive oil, salt, and pepper, to taste. Let the salad stand for 10 minutes before serving.
