Buffalo Chicken Quinoa Salad Recipe

Ingredients
    Salad
  • 1 cup quinoa
  • 2 cups water
  • 3/4 pound boneless skinless chicken breast, cut into bite size pieces
  • 1 cup broccoli florets
  • 3/4 cup shredded carrots
  • 3/4 cup shredded cabbage
  • 1/2 cup blue cheese crumbles, plus more for garnish
  • 4 green onions chopped, save half for garnish
  • Dressing
  • 1/3 cup olive oil
  • 1/2 cup hot sauce (I recommend Franks)
  • 1 teaspoon seasoned salt
Instructions
  1. In a fine-mesh strainer, rinse quinoa well and drain. In a medium pot, combine quinoa and water. Bring to a boil, then cover and turn heat to low. Cook until all the water is absorbed, about 20 minutes. Remove from the heat, fluff the quinoa with a fork.
  2. While the quinoa is cooking make the buffalo sauce dressing and cook the chicken and broccoli. In a measuring cup or small bowl combine the olive oil, hot sauce, and seasoned salt. Whisk to combine. Set aside.
  3. Heat a medium size skillet over medium high heat Add a tablespoon of olive oil and saute the broccoli for about 5 minutes. You want it to just start to soften, but still be crisp. Remove from the pan and set aside. Add the chicken to the same pan and cook the chicken for about 5 minutes or until cooked through. Add 1/4 cup or so of the buffalo sauce and cook until the chicken absorbs the sauce.
  4. When the quinoa is ready add the chicken, broccoli, carrots, shredded cabbage and as much of the dressing as desired (I ended up using all of the dressing, but we like things extra saucy) toss well. Add the blue cheese and half of the green onions. Toss again and serve warm with extra blue cheese crumbles and green onions.

Buffalo Chicken Pasta Bake Recipe

1 16 oz. box Penne pasta, cooked and drained
3 boneless, skinless chicken breasts; cubed and cooked
1/2-1 C. Franks Hot Sauce
3/4 -1+ C. Ranch dressing (or Blue Cheese)
1-2 C. Shredded cheese (Colby Jack or Cheddar)
1. Preheat oven to 350* and prepare a deep baking dish.
2. Mix together hot sauce and ranch.  In separate bowl, mix chicken, pasta and cheese.  Pour sauce over all and mix well.
3. Pour everything into prepared baking dish, sprinkle with cheese (if desired) and bake for 20-25 min.

Healthy Buffalo Chicken Wrap


INGREDIENTS
2 tablespoons  hot pepper sauce, such as Frank's RedHot
3 tablespoons  white vinegar, divided
1/4 teaspoon  cayenne pepper
2 teaspoons  extra-virgin olive oil
1 pound  chicken tenders
2 tablespoons  reduced-fat mayonnaise
2 tablespoons  nonfat plain yogurt
  Freshly ground pepper, to taste
1/4 cup  crumbled blue cheese
4   8-inch whole-wheat tortillas
1 cup  shredded romaine lettuce
1 cup  sliced celery
1   large tomato, diced
DIRECTIONS
1. Whisk hot pepper sauce, 2 tablespoons vinegar and cayenne pepper in a medium bowl.
2. Heat oil in a large nonstick skillet over medium-high heat. Add chicken tenders; cook until cooked through and no longer pink in the middle, 3 to 4 minutes per side. Add to the bowl with the hot sauce; toss to coat well.
3. Whisk mayonnaise, yogurt, pepper and the remaining 1 tablespoon vinegar in a small bowl. Stir in blue cheese.
4. To assemble wraps: Lay a tortilla on a work surface or plate. Spread with 1 tablespoon blue cheese sauce and top with one-fourth of the chicken, lettuce, celery and tomato. Drizzle with some of the hot sauce remaining in the bowl and roll into a wrap sandwich. Repeat with the remaining tortillas.

Buffalo Chicken Taquitos


Buffalo Chicken Taquitos


  • 4 cup(s) of chicken, cooked and shredded
  • 12 soft taco, flour tortillas
  • 2 cup(s) of mozzarella cheese, grated
  • 4 ounce(s) of Philadelphia cream cheese
  • 1/3 cup(s) of Frank’s hot sauce
  • 1/3 cup(s) of milk
  • 2 tbsp. of butter
  • 1 tsp. of Mrs. Dash
  • 1 tsp. of garlic powder
  • 2 tbsp. of vegetable oil
*Note to make a lower calorie/fat version of this.  Use the Fat Free or 1/3 Less Fat Cream Cheese.
Steps
  1. Preheat oven to 425 degrees.
  2. In a small sauce pot over medium low heat, melt butter.
  3. Add Mrs. Dash, garlic powder. Stir to combine and cook for 1 minute.
  4. Add cream cheese and stir until melted and completely combined with butter and spices.
  5. Wisk in hot sauce and milk and simmer for 5 – 8 minutes. Add salt to taste.
  6. Combine chicken and sauce.
  7. Lay out a tortilla; fill with about ¼ – 1/3 cup chicken and 2 tablespoons of mozzarella cheese.
  8. Tightly roll up taquito and place on a greased baking sheet; repeat until chicken is gone.
  9. Brush taquitos with vegetable oil on all sides.
  10. Bake for 15 – 18 minutes; rotate them every 5 minutes, until golden brown.
  11. Serve with Kraft Blue Cheese Dressing

Buffalo Chicken Grilled Cheese Sandwich


Ingredients
  • 1/4 cup cooked shredded chicken, warm
  • 1 tablespoon hot sauce
  • 1/2 tablespoon mayo (optional)
  • 1 tablespoon carrot, grated
  • 1 tablespoon celery, sliced
  • 1 tablespoon green or red onion, sliced or diced
  • 1 tablespoon blue cheese, room temperature, crumbled
  • 1/2 cup cheddar cheese, room temperature, grated
  • 2 slices bread
  • 1 tablespoon butter, room temperature
Directions
  1. Mix the chicken, hot sauce, mayo, carrot, celery and onion in a small bowl.
  2. Butter the outside of each slice of bread, sprinkle half of the cheeses on the inside of one slice of bread, top with the buffalo chicken salad, the remaining cheese and finally the other slice of bread.
  3. Heat a non-stick pan over medium heat.
  4. Add the sandwich and grill until golden brown and the cheese has melted, about 2-4 minutes per side.

Buffalo Chicken Rolls



Buffalo Chicken Rolls
makes 12
12 egg roll wrappers (roughly 4 square inches)
1 cup cooked and shredded chicken (6 ounces)
1/2- 2/3 cup Frank’s Red Hot Sauce
1 cup crumbled blue cheese (4 ounces)
1 cup broccoli slaw or cole slaw (dry)
Small bowl of water
Nonstick cooking spray
Blue cheese dressing, for serving
Preheat oven to 400 degrees F. Lay egg roll wrappers on a clean work surface. In a small bowl, stir chicken* (see note below) and hot sauce until well coated, using more or less sauce depending on your spice preference. The meat should be moist with sauce.
Begin by placing one tablespoon of the broccoli slaw on the diagonal of the bottom right corner of one of the wrappers. Next, place 2 tablespoons of shredded spicy chicken evenly on top of the slaw. Spoon 1 tablespoon of the blue cheese crumbles over the chicken. Do not overfill.
To fold: Fold the bottom right corner over the stuffing mixture so that it covers it completely, with the tip of the corner now pointing to the center of the egg roll wrapper. Fold in the bottom left corner, followed by the right, so that you now have formed an envelope. Roll the wrap upward one time, leaving the top left corner open. Wet your index finger in the small bowl of water and press to moisten the top left corner. Now fold that down on top of the filled roll, sealing it like you would an envelope.
Repeat with remaining rolls.
Place the rolls on a wire rack set on top of a cookie sheet (or just on a greased cookie sheet) coated with nonstick cooking spray. Spritz each roll evenly with nonstick cooking spray. Bake for 12-15 minutes, or until the rolls crisp and turn a light golden brown.
*Note: To make the chicken, place 1/2 lb of uncooked chicken breast in a small pot and fill with enough water just to cover it. Bring to a boil on your stovetop, reduce the heat slightly, then simmer for about 12 minutes, or until cooked through. Drain and let cool before shredding with two forks, pulling against the grain of the meat.

Buffalo Chicken Dip Recipe


Buffalo Chicken Dip Recipe

1 1/2 cups cooked and shredded chicken or 1 (12 ounce) can chunk chicken, drained
1 (8 ounce) package cream cheese, softened
1/2 cup Ranch dressing
1/2 cup Buffalo wing sauce (such as Frank's Red Hot, not to be confused with their pepper sauce. Start with less if you want and add more to your desired hotness.)
3/4 cup shredded Cheddar cheese
blue cheese crumbles (optional)


Heat chicken and Buffalo sauce in a skillet over medium heat, until heated through. Make sure to break up the chicken so there are no big chunks. Stir in cream cheese and ranch dressing. Cook, stirring until well blended and warm. Mix in shredded cheese. Pour into a shallow dish or pie pan and sprinkle with blue cheese crumbles and microwave it until the cheese melts. We usually only sprinkle blue cheese on half of it for those who aren’t blue cheese fans. Serve with chips for dipping.
