Copycat Cheesecake Factory Oreo Cheesecake Recipe


Ingredients
    For the crust:
  • 1 1/2 cups Oreo cookie crumbs (about 23 Oreo cookies finely chopped)
  • 2 tablespoons melted butter
  • 1/4 cup dark chocolate chips (optional)
  • For the filling
  • 1 1/2 pounds light cream cheese (three 8 ounce packages)
  • 2/3 cup sugar
  • 5 large eggs
  • 1/4 teaspoon salt
  • 2 teaspoons vanilla
  • 1/4 cup flour
  • 6 - 8 ounces nonfat greek yogurt (or light sour cream, if you prefer ... my container only had 6 oz. in it so I went with that)
  • 5 Oreo cookies, coarsely chopped (I used 1/2 cup of the cookie crumbs)
  • For the top: About 10 coarsely chopped Oreo cookies (or just more oreo cookie crumbs)

Instructions
  1. First get out all the ingredients and let them warm to room temp as much as possible. (Honestly I skipped this step and my cheesecake turned out fine, but that's what the recipe said to do so I thought I'd pass it on ...)
  2. Now make the crust: If you are using chocolate chips, melt the butter, then stir the chocolate chips into the hot butter right away and stir. The heat from the butter should melt the chocolate chips. Mix the oreo crumbs with the melted butter/chocolate mixture and press into the bottom of a 10-inch springform cheesecake pan.
  3. Put the cream cheese in a large bowl and beat on low speed with your mixer until it's light and fluffy. Begin adding the sugar, little by little, beating until it's all mixed in. Scrape the sides of the bowl with a rubber scraper as you go to make sure it is all getting mixed in well.
  4. Then add the eggs one at a time, beating each egg fully into the batter and scraping down the sides of the bowl again before adding the next egg. Add the greek yogurt, vanilla and flour and beat some more until everything is mixed in and smooth.
  5. Gently fold a few coarsely chopped oreo cookies (or 1/2 cup crumbs) into the batter.
  6. Pour the batter into the prepared springform pan. Sprinkle the top with more Oreo cookie crumbs.
  7. Set the top and bottom racks of the oven far enough apart so that you can set a pan of water on the lower rack and the cheesecake on the top rack. Set 2 circular cake pans (or one larger cake pan) filled 2/3 of the way with water on the lower rack. (This will act as your "water bath" without having to go to all the trouble of actually putting the cheesecake in the water.) Preheat the oven to 325.
  8. Place the cheesecake on the top rack of the oven and bake for about an hour. Test it ... it should be just slightly jiggly in the middle when you shake the pan gently. If it's really jiggly, cook for another 15 minutes. When the time is up, turn the oven off, prop the door of the oven open and let it sit for an hour. Then, remove it from the oven, cover and refrigerate for 24 hours. I didn't think my son would actually wait long enough to let the cheesecake "season", but he did!
  9. Now you know what to do. Slice it into pieces and enjoy. I recommend small slices because it is a rather rich cheesecake.

Oreo Layer Dessert




Oreo Layer Dessert
1 pkg of regular Oreos
1/2 c. of butter
1 lg box of instant chocolate pudding
2-8 oz cool whips
8 oz. of cream cheese, softened
1 c. powdered sugar

Crush the whole package of cookies either with a food processor, or in a bag and a rolling pin.  Save a 1/2 c. to sprinkle on top of dessert when it's done.  Pour remaining crumbs in a 13x9 pan.  Melt butter and pour into crumb mix.  Stir it up good and press crumbs in bottom of pan to make a crust.  Make chocolate pudding according to package directions and let it setup in the fridge.  In a mixing bowl blend cream cheese until nice and smooth and then add powdered sugar, mix.  Then fold in 1-8 oz thing of cool whip.  Top oreo layer with cream cheese mix, then pudding, then your last 8 oz thing of cool whip, and then sprinkle remaining Oreo's on top.  Cover and refridgerate until ready to serve.

Mini Oreo Cheesecakes (no-bake) Recipe


1/2  cup cream, lightly whipped
1 tbsp vanilla essence
1 1/2 teaspoon gelatine, dissolved in 2 tbsp boiling water
6 tbsp caster sugar
250g Philadelphia cream cheese
1 cup of oreo, crushed
-  Beat the cream cheese and sugar until smooth. Fold in the gelatine mixture, vanilla essence, cream and 1 cup of crushed oreo.
- For the crust, I did it the lazy way by using an oreo for the base. (No crushing of oreos, mixing with butter and pressing into tin.)
- For the above, I used plastic strips to make temporary round containers to place the oreo and cream cheese mixture. If you don’t have those, use your trusty muffin pan. Place liners and an oreo into each muffin hole, then fill up with the cream cheese mixture. Freeze – add oreos on top before serving (suggestion from Dorothy – so that the oreos won’t get soggy ;))
Initially placed these in the fridge but I got the same comments from those who tried it – it was a bit too soft for a cheesecake. So I transferred it to the freezer. It didn’t harden (phew!) but became a nice dense cheese cake texture ;)

Cookies and Cream Cupcakes


Cookies and Cream Cupcakes

Cupcakes:
1 1/2 cups all purpose flour
1/2 cup natural unsweetened cocoa
1 1/4 cup sugar
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
2 eggs
1/2 cup vegetable oil
1 teaspoon vanilla
3/4 cup milk
3/4 cup hot water
24 Oreos, plus more for crumbs
Frosting:
1 cup shortening
1 lb. powdered sugar
1 teaspoon vanilla
3-6 Tablespoons milk
2 or more teaspoons Oreo cookie crumbs
For the cupcakes:
  • Preheat oven to 350 degrees.
  • Line tray with 12 baking cups.
  • Place one whole cookie in each cup or break apart at least 12 cookies and place the broken pieces into each cup.
  • Mix the flour, cocoa, sugar, baking soda, baking powder and salt in a large mixing bowl using a wire whisk.
  • Add the eggs, oil, vanilla and milk and mix well until thoroughly combined. Add the hot water and mix until combined.
  • Transfer the batter (it will be very liquid) to a large measuring cup and then pour batter into each baking cup so it’s about three quarters full. You should have a little left over.
  • Bake for 16-18 minutes.
Makes at least 12 cupcakes
For the frosting:
  • Beat the shortening in a mixer until smooth.
  • Add vanilla and mix until combined.
  • Add the powdered sugar in three additions, scraping down the sides after each addition.
  • Add a Tablespoon of milk at a time and mix together until you achieve the consistency you like.
  • Add the cookie crumbs and mix until completely combined. You can add more if you like, but I just wanted a light speckling to show off the white frosting.
  • Place frosting in a decorator bag with a 1M tip and swirl on top of each cupcake.
  • Insert a cookie on top of each cupcake.
  • You can also apply frosting on each cupcake in a mounded shape. Turn upside down and roll the top around in a small bowl of cookie crumbs to coat.

White Chocolate Oreo Brownie Pie with Chocolate Chip Topping

6oz. Hershey's Cookies 'n' Creme Chocolate Candy Bar
½ cup sugar
½ cup butter
Melt over med low heat until melted

Whisk in 2 lightly beaten eggs and ½ teaspoon vanilla

Add:
1 cup flour
½ teaspoon baking powder
pinch of salt
Stir until mixture is incorporated and smooth

Pour into greased 9" springform pan
Bake at 350°, 20 minutes

Remove from oven
Immediately pour 7oz. sweetened condensed milk over top of brownies
Layer with ¾ cup mini semi sweet chocolate chips
Let cool

Oreo Cheesecake Cookies

Oreo Cheesecake Cookies


Yield: About 1 dozen cookies (mine made about 1 1/2 dozen, as I used around 1 inch balls of dough)

½ cup unsalted butter, at room temperature
3 ounces cream cheese, at room temperature
1 cup granulated sugar
1 teaspoon vanilla extract
1 cup all-purpose flour
½ cup mini chocolate chips (I didn't have minis so I left these out)
1 cup Oreo cookie crumbs

1. Preheat oven to 375 degrees F. Line a baking sheet with parchment paper (this is important! I was out of parchment and my cookies got a little overcooked on the bottom, I think the Oreo crumbs cooked quickly on the hot baking sheet and caused this) and set aside.

2. In a mixing bowl, cream together the butter and cream cheese on medium speed until smooth and well-combined.

3. Add the sugar and vanilla extract and mix until the ingredients are well-combined. Add the flour and mix on low until the flour is incorporated. Stir in the mini chocolate chips with a rubber spatula.

4. Place the Oreo cookie crumbs in a small bowl. Scoop the cookies into about 1½ to 2″ balls (the dough will be soft, don' t worry if it doesn't scoop into a well-formed ball, the crumbs will help hold it together)and then roll in the cookie crumbs. Place the cookie balls on the baking sheet. Bake for 12 to 15 minutes, or until the edges are golden and the tops are slightly puffed.

5. Cool on the pan for 2 minutes before transferring to a wire rack to cool completely. Store in an airtight container.
