Best Ever Roast Chicken Recipe




8 of your favourite chicken pieces, skin on and bone- in preferable

2 tbsp soy sauce

1 tbsp light brown sugar

2 tbsp red wine vinegar

3 tbsp olive oil
4 shallots, chopped
2 cloves of garlic, minced
Handful of fresh parsley
Salt and Pepper



1.     Preheat oven to 425 
2.     In a large baking dish, combine marinade and toss with chicken. Season well.
3.     Place chicken pieces skin side up and roast for 30 minutes until it begins to brown. Remove and baste with marinade. Flip pieces and bake a remaining 10 minutes or until chicken is cooked.
4.     Garnish with lots of fresh parsley

  1. I do want to try this but will the chicken get enough flavor if you are only basting it once?

  2. You're tossing it with the marinade, then basting it, so I think it will work well.

  5. Yummy! Made this tonight with bone-in breasts and it was fabulous! We had mashed potatoes and fresh green beans. I baked it for 30 mins, flipped for 20, flipped and turned the heat up to 425 to finish.Thanks for the great recipe. I will make this again!

    1. I agree I used 5 small pieces of chicken beasts & I just had a little bit left...just double everything & I'm sure that will help =)

  8. I agree with JenniferTorregrosa. The marinade recipe doesn't seem to be enough for all 8 pieces. I think I'll double the recipe.

  9. Are you suppose to bake it in the same baking dish your marinade is in or are you suppose to baking in a separate dish for 30 minutes an than baste again?

  11. This came out sooo good!!! I used 5 small chicken breasts,I added half a onion instead of the shallots,& I also let it sit over night before baking it...it's so good thank u for posting this I will be making this again!!! =)

  14. Awesome recipe, used it twice in a week, my family loved it that much! I too used half an onion instead ofthe shallots, used 2 tsp of sugar as opposed to the 1, and i added a tablespoon of an expression flavored balsamic vinegar to the mix. Absolutely exquisite!!!!
